Coganto Rosé is a de-alcholised red wine produced from grapes from the Coastal Region of South Africa, an area known for high quality wines from low yielding vineyards. All our growers are Fairtrade certified.

Cognato Rosé is a blend of Pinotage and Cinsault.

The grapes are picked at full maturity and gently pressed to give a light colour to the must. Fermentation takes place with a cultured yeast at temperatures of between 12 and 14 ° C to enable a slow fermentation process – this creates more of a mouthfeel to the wine. After fermentation, the wine is allowed to remain on the lees for up to 3 weeks, which gives additional complexity.

The alcohol is then carefully removed with a vacuum spinning cone process, which allows the alcohol to be removed without affecting the integrity of the wine.

The result is a fresh rosé wine with clear strawberry tones, herbs and citrus. An ideal wine as an aperitif on a hot summer day, or for tasty fish dishes and salads.

Sugar Content: 1.9g/100ml

Coganto White is a de-alcholised red wine produced from grapes from the Coastal Region of South Africa, an area known for high quality wines from low yielding vineyards. All our growers are Fairtrade certified.

Cognato White is 100% Chenin Blanc. 

The grapes are picked at full ripeness of between 23 and 24 Balling. They are then destemmed and the juice is separated by gentle pressing. The grape juice is settled overnight and then racked from the lees. It is then inoculated with cultured yeast and fermented at temperatures of between 12  and 14°C to allow for a long slow fermentation process which adds mouthfeel to the wine. After the fermentation is completed the wine remain on the lees for 3 weeks to add further complexity.

The alcohol is then carefully removed with a vacuum spinning cone process, which allows the alcohol to be removed without affecting the integrity of the wine.

The result is a crisp yet fruity wine with hints of citrus and freshly cut grass on the nose. Cognato White is a perfect alternative for seafood dishes, chicken or as a pre-dinner non-alcoholic drink.

Production process:

The first phase, like for the regular Limoncello, is the «Costa d’Amalfi PGI Sfusato» lemon infusion made in a hydroalcoholic solution.

After the infusion, the hydroalcoholic solution is filtered, mixed with water, sugar and essential oils, and balanced to maintain the ABV lower than the standards for a «non-alcoholic» beverage.

Once the Limoncello is balanced, the formula is enriched with a touch of natural ginger and citric acid to offer the warm, delicate byte typically tasted in the classic Pallini Limoncello.

Hacienda Salzillo is a Joven style wine from AOP JUMILLA. It exists in Red (Monastrell), White (Airen) and Rosé (Monastrell). It's our entry-level wine with AOP certification. It has a really high quality-price ratio, and is also available as private labels. Volumes are high. Hacienda RED: Color Intense cherry color Aroma Over-ripened fruits as plum, fig and raisings accompanied with wooden terpenes because of its stay in Oak Barrel. Palate Thanks to high-balanced between sugar and acidity, we obtain an exquisite and exuberant wine which is a round, intense and with a long and elegant finish.

Hacienda White: Brilliant and clear pale straw-ycllow color. Persistent fruit aromas with light hints of apples and exotic fruits. The palate is dry. lts moderate acidity makes it fresh. Light and harmonious wine.  To drink with : Seafoods, vvhitefish and sorne not very spicy blue fish. Fresh soft cheeses.

Hispalis Red: Color Intense red cherry color color with violet hints typical of its youth. Aromas Elegant floral nuances with a touch of pepper and undergrowth. Palate is ample and generous, with excellent sweet tannins that open out to fruity aroma notes.

Hispalis White: Color Greenish white color with straw tones. Aromas Floral aromas (jasmine) and tropical fruits such as pineapple and grapefruit. Palate Excellent balance between its acidity and light sweetness from the alcohol, getting a round and equilibrated wine.

Hispalis Rosé: Color Attractive red color with soft blue and violet hues typical of its youth. Intense and abundant tear show us a well-structured and bodied wine. The color is clear and bright. Aromas Fresh and pleasant aroma. Fruity notes remind us red fruits (both acidic and sweet as raspberry and strawberry) and tropical notes as mango. Soft tones of fresh herbs. Palate Fresh entry, lively acidity, very well-balanced between alcoholic and glyceric contents. This balance gives to Rosé wine a high intensity in mouth, tasty, pleasant and with great persistance. Delicate and enveloping wine.

Zenizate is a 4 months oaked wine, available in Monastrell, Syrah and Cabernet Sauvignon.  

Zenizate Monastrell: Color: Intense red cherry color with purple tones. Aroma: Fruity and floral aromas, such as rose, linked with dairy aromas. Palate: It's expressive, full-bodied, pure and persistent wine.

Zenizate Syrah: Color: Bright cherry color with dark tones, luminous violet highlights. Aromas: Delicious and complex violet aromas, black cherries, wild herbs, licorice and spices. Palate: Exuberant, with exquisite tannins which makes a long and elegant finish.

Zenizate Cabernet Sauvignon: Color: Intense garnet red color with edge slightly brick red touches because of the short stay in oak. Aromas: Keeps primary aromas such as raspberry and lychee, accompanied by tertiary aromas such as vanilla,leather or roasted aromas. Palate: On palate is velvety, round and balsamic.

ELABORATION With grapes selected from old vines (about 60 years old) and low yields, giving madurity and intensity wine, GÜERTANO Monastrell is macerated for 15 days at low temperatures. The must obtained is by ausence of the force of pressure (only by gravity) to get a higher quality wine. Once the alcoholic fermentation is finished, it is deposited in a French new oak barrel where the malolactic fermentation will take place, for a period of 4 months approximately

TASTING NOTES Color Intense red cherry color with purple tones. Aroma Fruity and floral aromas, such as rose, linked with dairy aromas. Nuances of smoke, coffee and some spices thanks to its stay in Oak Barrel. Palate It's expressive, full-bodied, with hints of chocolate flavour and persistent wine.

ELABORATION: This peculiar wine has been produced with short macerations of a few hours at low temperatures. After a racking process, the fermentation will be made with selected yeasts for 21 days at 16 degrees. The wine will keep in touch with its own lees

Matius is a Crianza Monastrell with 9 months in oak barrel. It is the perfect embodiment of a Monastrell from Jumilla AOP, with an affordable price and profile. Color Intense cherry-red colour with seductive edges. Aroma Presents great aromatic diversity, highlighting the aromas of mature fruit, amalgamated with spicy and smoked notes, typical for their stay in wood. Palate It's a velvety, round, well-balanced and balsamic wine.

Camelot is a Sweet red wine, based on Monastrell.  

ELABORATION: This wine is produced from over-maturated grapes in the same vines. This is possible thanks to meticulous harvestings until three times to obtain the maximum sugar production. The vineyards are more than 50 years old with very low production, not more than a kilograme per vine and year. The grapes are macerated for 15 days at low temperatures. It is produced a fermentative stop because of addition of alcohol. The must is obtained thanks to a pressing with low pressures and after of the racking process, is sent to american oak barrels for the tamed of its tannins.
