THE WINE Deligeroy is emblematic of our know-how in producing fine, sparkling Loire wines according to the Méthode Traditionnelle, developed since 1953.

TERROIR The grapes come from selected clay-limestone, tufa chalk, and shale terroirs to the south of the Saumur area. Careful ageing in our tufa chalk cellars enhances its freshness and finesse.

VINIFICATION Hand picking, gentle pressing, and cool fermentation (18°C) ensure that all the aromas are preserved. Second fermentation in bottle of a selection of the best wines, according to the Méthode Traditionnelle.

MATURING The bottles are stored horizontally on wooden laths in our tufa cellars for a minimum of 18 months before disgorging, to develop an incomparably fine bead.

VARIETALS Chenin blanc : 65% Chardonnay : 20% Cabernet franc : 15%

SERVING Enjoy chilled (8-10°C).

TASTING NOTES Pale yellow colour. Fine, persistent bead. Fine, lively, complex bouquet, combining the freshness of Chenin Blanc and the floral overtones of Chardonnay with Cabernet Franc fruit. Lively initial impression on the palate, with a rounded structure, and an elegant follow-through. Lovely, long aftertaste, with hints of fresh fruit (pears, peaches).

FOOD PAIRING Enjoy as an aperitif or simply for pleasure (soft cheeses, fruit tarts sorbets, etc.).

MATURING Aged for a minimum of 16 months on the lees in the tufa cellars, where the wine continues ageing, protected from light and temperature variations.

TASTING NOTES Saumur Brut Deligeroy has an attractive straw yellow colour. The bubbles are fine and the bead is regular. The floral bouquet is typical of Chenin Blanc. This sparkling wine is fresh and lively on the palate, with a very elegant aftertaste. Despite a very low sugar level, this wine is light and well-balanced.

FOOD PAIRING Saumur Brut is an excellent aperitif. Its crisp, lively character makes it the ideal wine with which to start off the evening. Cuvee Deligeroy is a perfect choice to accompany all starters but also fishes and poultry cooked with cream.

SITUATION There are several chalky layers from base of the Méron slopes up to the Loudun fault.

VINIFICATION Crushing and destemming. Cold settling for 24 hours. Vinification at low temperatures (17 to 19°C) for 2 weeks. Racking and aging in stainless steel tanks on thin lees for 3 to 4 months.

MATURING Bottled in cellars dug out of tufa,it continues to age in bottle in these ideal and natural conditions protected from the light and the temperature changes.

TASTING NOTES Straw-yellow colour with green highlights. Intense, engaging nose of vineyard peaches, lemon zest, and fresh grapefruit - a veritable fruit basket of aromas. The wine starts out straightforward on the palate with fine lemon flavours. The structure is tight and accompanied by fresh grape flavours. The smooth, long aftertaste is reminiscent of vineyard peaches.

FOOD PAIRING This wine is very enjoyable with fish in a sauce, Asian food, goat's cheese, and duck, or as an aperitif.

THE WINE The winegrowers : "Domaine des Ormes combines our two passions: viticulture and our family. Winemakers for 6 generations, we are devoted to perpetuating the family tradition. We regularly worked with our father, who gradually instilled a love for winegrowing in us. It was me, François, who started looking after things when my father retired. As for me, Pascal, I went to help François at the domaine after I joining the army and travelling all over the world. We once again share a passion for looking after the vines and enjoy the bond that unites us - one that has also attracted my son, who wishes to carry on the family tradition..." "The vines are an average 30 years old. Most were planted by my father and uncle more than 40 years ago. The oldest vines, more than a century old, and were planted in curved rows to make it easier for horses to plough in times past. We are very attached to preserving the work of our ancestors. The name of our domaine is linked to that of our village, Les Ulmes, which comes from the Latin word ulmus meaning elm tree. These majestic trees were formerly quite common in the village, but have since disappeared. We are were happy to choose this emblem for our domaine because the elm, like the oak, is a tree associated with prophets. Planted in the centre of the village, an elm tree is an important landmark, singling out a place where people go to discuss. An allusion by the Latin poet Catullus describes the elm as the husband, and vine the wife... Les Ulmes is a small commune that is full of history. It is said that Christ appeared in the town church in 1668, and a treasure was found in the village by two winegrowers in 1932. This consisted of 60 kilos of Roman sesterces dating from the 1st and 2nd centuries AD with the effigy of emperors Trajan, Hadrian, Antoninus Pius, and Commodus. Maybe we will find a treasure in our own vineyard one day..." Other than viticulture : "My brother has many outside activities and especially enjoys DYI. As for me, seeing as I am very attached to local traditions, enjoy boule de fort, a traditional Loire Valley sport that is played with a wooden ball with a concave side, called a faible, and a convex side called a fort, which explains the name. Players run after the boules on a curved court (like a ship's hull) and aim for the maître or jack, a small ball made of boxwood."

TERROIR Domaine des Ormes' Cabernet Franc vines are perfectly suited to expressing the chalk, tufa, and sandstone terroir. The Cabernet Franc vines perfectly express the characteristics of the sandstone, clay, and chalky soil which naturally regulates water supply.

VINIFICATION The grapes are totally destemmed. Fermentation in temperature-controlled stainless steel vats (23-24°C). Light daily pumping over during the first third of alcoholic fermentation, followed by a fairly long (14 days) maceration. Malolactic fermentation in our cellars.

MATURING The wine goes on to be aged for 6 -10 months. Estate-bottled.

VARIETALS Cabernet franc : 100%

SERVING Best enjoyed slightly chilled (14-16°C).

TASTING NOTES Beautiful deep ruby-red with purplish highlights. Beautiful intense nose of fresh red fruit (raspberry and blackcurrant). Full-bodied on the palate with a fine tannic structure.

FOOD PAIRING Best enjoyed with delicatessen meats, red meats, game, and cheeses.

SITUATION The vineyard has been recognized as particularly favored due to its soil, microclimate and location in the Saumur region.

TERROIR The Cabernet franc vines grow on clay limestone soil, dating from the Turonian stage.

VINIFICATION Selection of the best plots producing ripe grapes with great aromatic potential. Direct pressing. Winemaking brings out the varietal aromas and gives the wine an attractive complexity. Light cold settling (300 NTU). Fermentation at 16-20°C.

MATURING Aged on the lees for 4 months, then bottled in spring to lock in maximum freshness.

SITUATION Constructed on the foundations of a 16th century manor house, Chateau de Pont is a superb 19th century building located in the southern part of the Cher department, in the canton of Loches.

TERROIR The Sauvignon Blanc vines are planted around the château, on a clay-limestone terroir facing due south, with water regulation thanks to grassing.

VINIFICATION Ripening is regularly monitored by tasting the grapes. The grapes are picked when perfectly ripe, with optimum fruity aromas. The grapes are gently pressed, then undergo brief cold settling to retain maximum aromatic potential. Cold stabilised (5 days). Traditional temperature-controlled fermentation (17-19°C).

MATURING Aged on the lees for 4 months with regular bâtonnage (stirring). Early bottling.

VARIETALS Sauvignon : 100%

SERVING Serve chilled (10-12°C).

TASTING NOTES Pale golden colour. Powerful bouquet with nuances of grapefruit, boxwood, and blackcurrant buds. The wine is round, well-balanced and attractively fresh on the palate. Long and powerful aftertaste with sweet citrus overtones.

FOOD PAIRING Serve as an accompaniment to aperitifs, delicatessen meats, summer salads, fishes (zander), white meat, and goat's cheese.

THE WINE A lieu-dit, or named place, encompasses a group of small plots of vines. It comprises a unique terroir defined by its territorial, cadastral and historic unity. The alchemy between the soil, topography, climate, and grape variety results in appellation contrôlée wines with a unique profile and outstanding quality. Respect for the terroir combined with the expertise of winegrowers who love what they do produces superb wines.

SITUATION Les Poyeux vineyard is located in the commune of Chacé. Cited as one of the finest wines of the Saumur region in 1802, Les Poyeux was considered a benchmark vineyard, a "goldmine". In the 18th century, the vines were divided among several large estates. The various subdivisions were surrounded by two metre stone walls built by labourers who extracted the calcerous tufa stone from the subsoil.

TERROIR Soil : Les Poyeux has mainly shallow calcerous tufa (chalk and sandy-glauconitic soil from the middle-Turonian period). The soft chalk most often appears at a depth of less than 60 cm, which makes for a moderate, but fairly regular water supply that is ideal for producing quality wine. Grapes in all parts of Les Poyeux tend to ripen earlier than average.

Sun exposure : The highest plots of Les Poyeux are generally in the middle of south- and south-west-facing slopes, protected from the north wind by woods on the top of the hill. The remaining plots are located on the gently-sloping hillside.

Climate : The Saumur Champigny appellation is in the middle of a region with a temperate oceanic climate. Moreover, the particularly warm microclimate in summer accounts for the origin of its name: campus igni or "field of fire" in Latin.

IN THE VINEYARD Green pruning (bud thinning and leaf plucking) is done to enhance natural aeration, while sustainable agricultural methods are used to fight against fungal diseases.

VINIFICATION Grapes are completely destemmed and crushed. Fermented at 28°C in temperature-controlled stainless steel vats. The must is racked and returned twice during the first third of alcoholic fermentation. Short maceration (13 days) to extract the grapes' full potential. The wines is then taken down to our cellars, 25 m underground, for malolactic fermentation in tiled vats.

MATURING ageing peacefully, protected from light and temperature variations, for 6 - 10 months before bottling.

VARIETALS Cabernet franc : 100%

TASTING NOTES Very intense, deep colour. Complex bouquet featuring fresh red-berry fruit and blueberries, with truffle overtones. Starts out full-bodied and round on the palate, following through with fine texture and extraordinary volume. A well-balanced wine with a long fresh fruit aftertaste (blackcurrant, redcurrant).

FOOD PAIRING Grilled or roasted red meats, and flavourful roast poultry, leg of lamb.

Vinification method: Classic fermentation method with destemming and pre fermentative skin contact followed of the application of dry yeasts. Fermentation up to 30º C in the first 2/3, and lowering down to 20º C during the last 1/3. During the whole fermentative process, pumping over 2 times per day, using each time half of the volume contained in the vat. After the alcoholic fermentation, the cap is plunged for 30 days, and during that period, extraction of the gentle tannins is conducted, along with the malolactic fermentation and the natural stabilization of the wine.

Wine is aged in French of Allier oak barrels of 225 Lt for 3 months.

Winemaker tasting notes: Dark almost bright black colour, with an intense fruited aroma to matured blackberries. Powerful, deep full body, deep structured, but smooth and velvety, combining well the matured fruit and the oak the 3 months ageing. Tasty, elegant, with some complexity, long and intense.

Serving suggestions: A pleasure as aperitif, with tapas and snacks, or as accompany of red meat, risotto, paella, pasta, pizza, vegetarian, curry and other spicy food and dry cheese dishes. We recommend to serve at the temperature of 16-18ºC.

THE WINE Jérôme Alnet, a dynamic young winegrower, managing Domaine des Ruettes in the commune of Dampierre-sur-Loire, in the heart of the Saumur Champigny appellation. "The history of my domaine goes back to the 1920s when my great-grandfather, a wine merchant near Paris, came to settle in Saumur. He loved the region and the quality of life there. He bought his first vines of what would later become the family vineyard, and tended them for 20 years. No one in the family came to look after the domaine after him, so it went through a dormant period. However, his grandson - my father - came to breathe new life into the vineyard in 1963. He encountered some negative reactions from the neighbours since he was inexperienced, but he learned quickly enough and succeeded in making the domain relive and prosper. After studying viticulture, I worked with my father for twenty years before taking over." "When my great-grandfather settled in Dampierre, he bought a house surrounded with vines. Built out of tufa, this semi-troglodyte dwelling was named Les Ruettes after the path that runs alongside the estate and leads to the Château de Saumur. This was also the name he gave to the domaine. " "A 4th generation winegrower, I am proud to perpetuate the family tradition. Although I come from a wine background, I did not think I would ever become a winegrower. However, my love of nature has been transformed into a love for viticulture. I took advantage of my viticultural studies and my experience in several vineyard regions (Anjou, Médoc, Burgundy, and Corbières) to broaden my vision of the profession and bring a fresh new look to the family domaine. SITUATION Located south of the Loire, the 12-hectare vineyard overlooks the river.

TERROIR Domaine des Ruettes is located on a limestone plateau (tufa) overlooking the Loire with superb sun exposure. The Cabernet Franc vines grow on soil consisting of clay and flint (which retains the sun's heat) on a layer of calcerous tufa (which is excellent for regulating water supply). Sun exposure is also ideal.

VINIFICATION Green pruning (severe bud thinning, leaf plucking, and bunch thinning) is done to obtain concentrated grapes (yields of 50 hl/ha). Grapes picked when fully ripe as ascertained by tasting. Traditional winemaking. Long maceration (20 days) with gentle extraction of polyphenols.

MATURING Aged for 6 to 8 months prior to bottling in galleries dug out of limestone tufa, away from light and variations in temperature.

VARIETALS Cabernet franc : 100%

SERVING Served slightly chilled (14-16°C).

TASTING NOTES Beautiful ruby-red with purplish highlights. Open, attractive nose of red fruit (blackcurrant, redcurrant) and citrus, with subtle overtones of mint and red sweet pepper. Well-structured, warm, and powerful on the palate with delicious fruit flavours and great balance.

FOOD PAIRING This wine is a treat with fish in a sauce, roast poultry, well-marbled beef, and soft-ripened cheeses.

SITUATION Located a few kilometres from the Loire, in the middle of vines, Villa Lorane is a beautiful building made out of tufa, the local luminous white rock, and topped with a blue slate roof. Its bucolic garden with various types of roses invites visitors to enjoy the famous douceur angevine (sweet life in Anjou).

TERROIR Made from selected plots with clay-schist soil.

IN THE VINEYARD The berries are regularly tasted to target optimum ripeness.

VINIFICATION Precision winemaking to bring out the grape variety's qualities: a beautiful pale colour and an intense, complex bouquet combining varietal aromas (citrus) with ones brought out by fermentation (amyl, sweets, strawberry). Selected plots producing fresh wines with great aromatic potential. Direct pressing. Winemaking brings out the varietal aromas and gives the wine an attractive complexity. Light cold settling (300 NTU). Fermentation at 16-20°C stopped by chilling in order to maintain residual sugar. Aged on the lees for 4 months, then bottled in spring to lock in maximum freshness.

MATURING Aged on the lees for 2-3 months to lock in fruitiness.

TASTING NOTES Attractive brilliant pink colour with red highlights. Concentrated bouquet with a remarkable range of aromas: yellow peach, pineapple, fresh grapes, strawberry, and boiled sweets, as well as a marked black pepper component. Full-bodied, velvety, and superbly balanced. The wine is crunchy and smooth on the palate, with pronounced flavours of strawberry raspberry. Delicious long aftertaste.

FOOD PAIRING A wine for summer food: delicatessen meats, sweet-and-savoury appetisers (cheese and grapes, devils on horseback, etc.), as well as grilled meats. TASTING NOTES The wine is crystal clear with golden tints and fine persistent bubbles. It is charming on the nose with aromas of pear and apple intermingled with subtle notes of linden and ripe lemon. On the palate, the fine creamy bubbles combine perfectly with notes of toast and white flowers. The finish is mineral and the aromas are long-lingering in this organically-grown sulphite-free wine. It soon reveals its intensity after opening.

THE WINES from this estate are strongly influenced by traditional production methods, and are ambassadors for their appellations.

VINIFICATION Sandy terroir : limited extraction in order to obtain silky tannin. Pre-fermentation cold maceration (3 days) and short vatting. The wine is run off halfway through fermentation to obtain maximum fruit, good colour, and smooth tannin.

Clay-limestone terroir : Repeated pumping over and pigeage (punching down the cap) are done at the beginning of fermentation, then less often towards the end. Long vatting period (20 days) extracts high-quality tannin, richness, and structure, while retaining roundness and a sweet sensation.

MATURING : Wines are then blended and aged for 12 months with micro-oxygenation. Ageing potential : 5 to 10 years

TERROIR Soil : The present owners represent the eighth generation of the same family to own and manage this 25-hectare estate located in three communes: Bourgueil, Benais et Restigné. 79% of the vines grow on clay-limestone slopes with perfect east/west sun exposure, while the remaining 30% grow on light gravel and sand soil. MADE FROM SORGHUM, QUINOA AND FLAX SEED

THE WINE : A lieu-dit, or named place, encompasses a group of small plots of vines. It comprises a unique terroir defined by its territorial, cadastral and historic unity. The alchemy between the soil, topography, climate, and grape variety results in appellation contrôlée wines with a unique profile and outstanding quality. Respect for the terroir combined with the expertise of winegrowers who love what they do produces superb wines.

VINIFICATION : The grapes are totally destemmed and  fermentation  takes placein temperature-controlled stainless steel vats at 28°C. Light daily pumping over during the first third of alcoholic fermentation, followed by short maceration to extract just the right amount of flavour and tannin.

Ageing : Malolactic fermentation in our 25-metre-deep cellars.  Aged for 6 to 10 months prior to bottling in galleries dug out of limestone tufa, away from light and variations in temperature.Terroir

Soil : Les Epinats is a lieu-dit in the  commune of Brossay, in the southern part of the Saumur appellation. Les Epinats has two types of soil: deep soil with red stones called   terre à silex (silex = flint), and soil that is not very stony, with a higher proportion of clay due to the deterioration of Jurassic limestone. These geological factors, combined with good sun exposure, create an ideal environment for grape growing, with average to late ripening.

TASTING NOTES : Ruby-red colour. Intense bouquet of ripe red fruit (blackcurrant and plum).  Starts off quite round and smooth, going on to display soft tannin and an aftertaste of morello cherry. 

FOOD PAIRING : Serve well-chilled (12-14°C), this red wine goes admirably with grilled or roasted red meats.  It is especially delicious with rabbit sauce chasseur.
