Crisp, dry, balanced 

A German style beer known as the ‘Labourers Pilsner’, Boyne’s Dortmunder Export lager is a perfectly balanced beer in which neither malt nor hops dominate.

The Dortmunder style is well suited to our hard water in Drogheda. It has a deep blonde colour, with strong malt character, good hop bitterness and aroma, full-mouth feel and crisp finish.

The best European Pilsner malt provides a  more complex malt profile, while traditional Saaz hops give us the distinctive hop character of the style.

The balanced nature of this beer means it’s quite sessionable to drink but technically difficult to brew to a consistently perfect balance.

Out first cuvée, the Brut Secret, is an homage to the champagne expertise with complex and subtle blending of several dozens of vineyards which emphasizes to Pinot Meuier, a type of grape rarely highlighted but the celar master has worked in the balance of maturity to succeed a Champagne pleasure, universal, which will delight the palate and will make people hear its secrets.

The Rosé Extra Brut, is like its name pointing out, a particularly surprising blending since it is a rarity in Champagne. Here, it is the occasion to offer a delicate salmon pink color to the wine. Its aromas are distinguished with the expression of small berry fruits in the center of the refinement universe obtained by a optimum maturation in the cellars. An “inédit” character assumed by an Extra Dry dosage.

Boyne IPA 6.8%

Hoppy, Citrus, Resinous 

Boyne’s Classic IPA has a slightly hazy deep golden colour (unfiltered) and is dry hopped with abundant West Coast American hops which give it a fruity citrus aroma with a hint of pine.

On the palate there is bitter citrus and resin. A big-bodied beer that can stand up to the hops with a long dry finish. The Malt Bill, mostly pales, is simple and we use a classic American ale yeast in its brewing.

Saison 5.5%

Dry, Citrus, Peppery 

The best Saisons display a harmonious melding of fruitiness and spiciness derived from the yeast, with a complimenting spicy and earthy hoppiness and a delicate spice character. All of this occurs in a Boyne Saison which is slightly tart and dry, refreshing and thirst-quenching, easy-to-drink, but yet still complex.

It is a classic traditional yeast-driven “Farmhouse Beer” with a very pale colour and with a spicy aroma of pepper and citrus. A light and effervescent mouthfeel with a unique spicy yeast character that dominates on the palate with a dry citrus finish complemented by the wheat-driven gentle head. 

Boyne Pale Ale 4.8%

Tropical, Grapefruit, Citrus hops

Pale Ales are known for their aroma hop as much as their bittering hop and Boyne’s Pale Ale is a classic example.

It is a beer with a subtle malt base that allows the hops do all the talking.

The predominant hop used is Australian Summer, which gives a distinctive pink grapefruit aroma that jumps out of the glass and also gives a long citrus and tropical fruit finish.

Inky black colour with an intense roast aroma. A rich roasted coffee on the palate with a touch of raisin and dried fruits. The oatmeal addition gives a full and creamy mouthfeel with a long finish. 

Amber Ale 4.8%

Subtle malt medley & delicate hop profile 

Boyne’s Amber Ale is a malt driven beer to form a rich amber coloured ale. It is similar to an Irish red ale, however we have used a medley of malts to produce this ale rather than a red ale.

Unlike most Irish red ales, we have used contemporary varieties of hops and German hops called Mandarin Bavaria to introduce a rich orange peel character to the end of the beer, that complements the malt flavours perfectly.

Toffee aroma on the nose is followed by a balanced, light caramel mouthfeel.

Boyne Vienna Lager 5.0%

Soft, Delicate, Malty Lager 

Boyne’s Vienna lager is brewed using a traditional German two-step decoction mashing process to help develop a more complex malt profile.

Speciality and Vienna toasted malts are used and subtle hops add a crispness and residual sweetness. Head is soapy and slightly off-white.

A light amber/deep honey colour with a light caramel malt on the nose. The malt profile is complex but not heavy with a clean lager finish. Hop character is traditional and understated.

Boyne Imperial Stout 10.8%

Aged in Irish Whiskey Casks

Inspired by brewers in the 1800's to win over the Russian Czar, this is the king of stouts, boasting high alcohol and plenty of malt character.

Appearance is deep black with a tan coloured head. The aroma offers some roast coffee and cocoa nib with both sherry and whiskey notes. A rich mellow taste on the palate with coffee and bitter chocolate from the dark roasted malt. The high alcohol content is balanced by the malt and intense sherry barrel flavours. The rich full body finishes with the slightest hint of dry Sherried-fruit.

Aging for four months in Oloroso Sherry Cask which has held “The Whistler” range of whiskies for 2 years and bottle conditioning has extracted complex vanilla and spice notes and added a gentle carbonation to this special edition Imperial Stout. This complex beer evolves in the glass evoking different notes and aromas of spice, caramel, chocolate and coffee.

Carefully selected grapes are left on vine’s branches to hipermature until the firsts wintertime’s morning mists appear in the sky. Because of the position, the vines are constantly dried by the wind blowing from Adige’s dale and temperature is abated by the warm gale coming from Garda Lake. So grapes’ maturation is accompanied by a light natural drying process. The peculiar ground’s conformation and composition, that is stony, calcareous, generally poor and subjected to water flows, confer to Canaja an enviable bouquet. Its flavors bear in mind: blackberries, raspberries, juicy red fruits, drooped flowers: violets and roses’ bunches, spring haycocks’ vegetal savors, flint’s mineral smells, aromatic spices: pepper, leather, cinnamon and vanilla.
