Collenobile is made with 100% Grechetto di Todi grapes selected by Cantina Tudernum exclusively from vineyards belonging to our consortium.
Once the grapes are brought into the winery they are loaded in presses that allow a particularly soft pressing to obtain only the best from the grape.
To further enhance this great wine it is moved to newly-made casks (medium-toasted French durmast oak) to initiate the alcoholic fermentation process. The process lasts between 20 and 25 days and temperature is kept at a constant 14-15 °C.
The final result is a structured product, because of the wood’s contribution, that is, however, elegant and smooth. Accompaniment suggestions include soups, lean meats, and averagely matured cheeses.
Rosso di Montefalco DOC is a full-bodied wine made with three different grapes: Sangiovese (70%), Merlot (15%) and Sagrantino (15%) from the region surrounding the city of Montefalco.
Rosso di Montefalco is a special homage to our lands, an important and unique red wine from the autochthonous Sangiovese and Sagrantino grapes and enhanced their smoothness and softness with local Merlot grapes. The wine requires a long refinement period, initially in barrels and subsequently in bottles.
Rojano DOC Superiore is a full-bodied wine made with: Sangiovese DOC Superiore (60%), Merlot DOC Superiore (30%) and Sagrantino (10%).
The grapes are obtained from the region surrounding Todi, one of the most beautiful city in Umbria.
After a long refinement period, initially in barrels and subsequently in bottles, Rojano is ready to be enjoyed.
Todi’s clay rich lands and the climate of this hilly region give Rojano a substantial structure and a good sapid quality.
The wine’s complex and intense aroma fills the glass: ripe wild berries, spice cocoa and toasted. The wine flavors don’t betray the promises and the persistence of the aroma and the superior finishing make this an unforgettable wine experience.
Food accompaniments: aged cheeses and red pasta dishes, rich meats and game hunting.
Our Sangiovese D.O.C is a classic Italian blend of Sangiovese (85%) and Merlot (15%) grapes.
Sangiovese is a red Italian grape variety whose name derives from the Latin sanguis Jovis, “the blood of Jove.”
The wine displays rich plum, cassis and raspberry aromas. The palate is almost surprising with its burst of red berries and the soft rounded tannins typical of the Sangiovese grape.
In regards to food accompaniments, Sangiovese D.O.C is friendly and accommodating. Traditionally, it is best served with tomato sauce pasta dishes; however, because of its Merlot blend it is equally successful when paired with red meats or even a rich soup.

Full, mellow and velvety wine; a perfect blend of flavours like plum and undergrowth.
Deep ruby red in colour with violet reflections.

This wonderful wine is made from the best Grechetto and Trebbiano Spoletino grapes, both grown in Todi’s area. Strw-yellow in colour, this wine is like a fresh bouquet, with a pleasant and persistent character and hints af ripe fruits, peaches and apricots. It has a dry, mellow, ample and slightly acidic favour with a slinght rear-taste of bitter almonds, wichis typical of Grechetto grape.
It is a wine that can be enjoyed throughout a meal and is well suited so shellfish and light hors d’oeuvres. Serving temperature 12°C.
Umbria Bianco IGT is an everyday wine made from a selection of white grapes, including Trebbiano and Grechetto. The pressing of the grapes is quite soft to guarantee good quality to the product. Following the pressing phase, the must is kept at around 14 °C.
After a full day the wine is transferred to thermo-controlled fermentation vats to guarantee a controlled fermentation process at 16 °C. Finally, the product is filtered of any fermentation dregs.
The resulting wine is a pleasant, approachable and fresh white that is ideally served at 10-12 °C.
Umbria Rosso is made from the Sangiovese grapes so typical of the hills in the region surrounding Todi. Once the grapes are brought into the winery they are pressed and separated through a crusher-stemmer and successfully loaded in fermentation tanks. The must is then left in contact with the peels for 8 to 12 days. After the gross dregs are removed from the wine, it is placed in steel tanks to age for around four months. Following another three month refinement in bottles, the wine is ready to be enjoyed. Sangiovese IGT is a soft, well-rounded and slightly fruity red. It is ideal with appetisers, cold-cuts, and moderately mature cheeses. Serve at 14-16 °C
Made from Grechetto, Trebbiano and other white grapes. This wine displays lovely aromas of passionfruit and lime, with upfront fruit and a crisp, clean and refreshing palate.
A perfect wine to enjoy on hot summer days or with spicy foods any time of year.
Ideal with starters, white meat, fish and soup dishes.
Serve at 12/14° C.

The Lessini mountains protect it from the cold northerly winds and its south-facing position creates a Mediterranean-style microclimate. The geology and climate of the Valpolicella region are at the heart of its unique wines and winemaking tradition. W I N E : Aristocratico Amarone is made with a lengthy process. The grapes are harvested, dried and then slowly fermented; the contact with the grape skins can last about two months and then it’s aged in oak barrels for 24 months. The Lessini mountains protect it from the cold northerly winds and its south-facing position creates a Mediterranean-style microclimate. The geology and climate of the Valpolicella region are at the heart of its unique wines and winemaking tradition. W I N E : Aristocratico Ripasso is originated from vines trained on the traditional pergola system. At the end of the winter, after the first fermentation process, the wine is re-fermented on the skins of Amarone for approximately 10 days.
