The Spee'Wah Crooked Mick Pinot Grigio
Grape variety: 100% Pinot Grigio. Vintage 2017.
Specs: alcohol by volume: 12.5 %.
Vinification: Harvested during the cool of the night to retain freshness and varietal character, the Pinot Grigio was destemmed and pressed gently in an airbag press to release juice without extracting too much tannin or colour. The juice was then clarified before being inoculated with specifically chosen yeast strains designed to bring out the varietal characters of the wine. Fermentation was in stainless steel tanks and temperatures during ferment were kept cool to allow for a longer ferment, again, to retain freshness and allow for maximum aromatic production. The wine was stored in stainless steel tanks and stirred on lees to produce mid palate complexity and to create texture and mouthfeel before being fined, finished, and bottled.
Tasting notes:
Colour – Light straw with a vibrant green hue. Nose – Vibrant and fresh, this pinot grigio is the perfect wine for summer. Pear, white nectarine and grapefruit aromas leap out of the glass with a nuance of honeysuckle ever present. Palate – The palate is crisp, clean and refreshing having flavours that are complementary to the aromas as well as a distinct Meyer lemon character.
Serve at 6-10°C. Drink now or with careful storage may enjoyed for up to seven years.
Foods that complement this Pinot Grigio are: whole baby snapper grilled on the BBQ; coconut poached chicken with a mango and wild rice salad; abalone ceviche

TASTING NOTES
It’s intense, ranging from red to violet, lavish colour. On the nose,
lilacs, violets and red berries are perceived.
This wine opens with very sweet, smooth taste with round, elegant, luscious tannins and traces of red berries, cherries and ripe plums. The wood stands out perfectly granting delicate hints of vanilla and chocolate. It has a long-lasting, elegant finish with mature tannins. The
aroma, emanating from the fruit, is preserved through fermentation at a never-aggressive, perfect temperature.

Tasting Notes
Its color is pale yellow typical of the torrontés, the nose has a great concentration of fruit and citrus aromas that combine to form a wide variety of aromas ranging from grapefruit to sugars. In the mouth a good acidity is perceived, giving it a typical freshness of this variety with a very interesting volume, its end is long and persistent.

Tasting Notes
It presents an intense bright red color. The nose is very elegant and delicate with aromas of jams and red fruits such as plums and sour cherries. We also find subtle herbaceous and spicy notes that combine with mineral notes such as graphite and gunpowder. The wood provides aromas of chocolate smoke and tobacco achieving a very good assembly. In the mouth it is intense and complex of long persistence with sweet and round tannins that fill our mouth with flavors, aromas and pleasant textures

Colour.- Cherry red with violet hues; clean and bright.
Aroma.- Medium intensity, fruity, spicy notes given by the ageing in oak.
Palate.- Smooth, wide and well structured, rich in tannins with a long aftertaste.

PROCESS : Traditional wine making at 28ºC in stainless steel deposits under controlled temperature followed by a 15 days maceration and afterwards the malolactic fermentation is made for both varieties separated.
CRIANZA: After the malolactic fermentation, wine is taken to French and American barrel during 9 months completing the crianza in its own bottle.
TASTING:
Colour.- Intense red colour with violet tones; clean and bright.
Aroma.- Medium and complex intensity with spices and fruit aromas.
Palate.- Smooth, wide, harmonic, with a long aftertaste.

VINEYARD CHARACTERISTICS
Made from over 40-50 year old Garnacha
vines from a selection of single vineyards
with a yield of less than one kilo per vine.
DATE HARVESTED
From the 1st. week of October onwards.
PROCESS
Traditional method. Fermented at 28º C
with temperature control. Maceration in
contact with the skin throughout two weeks.
After the alcoholic fermentation we control
the malolactic fermentation in French oak.
AGEING
Once finished the malolactic fermentation,
we proceed to the decanting and pass the
wine to new French oak in contact with
its own skin. After this ageing we make a
selection of the best oaks, the coupage of
them and we proceed to the bottling. The
average stay of the wine in barrels is 8-9
months.
TASTING
Colour: Intense cherry red colour with ruby
hues. Very clean and brilliant.
Aroma: Intense, fine and elegant aroma
with mature red fruit qualities. Mineral,
spicy, coffee, toasted and vanilla notes, very
well integrated in the wine.
Palate: Powerful start, fleshy, this wine has
a good volume, on the palate it is balanced
and concentrated with a good acidity.This
wine is long lasting, silky and round.
SERVE AT: 17º C
PREMIUM OAKED GARNACHA WINE
ALCOHOL: 14,5 % Vol.
GRAPE VARIETY: Garnacha.
VINEYARD CHARACTERISTICS
Grapes from vineyards older than 30 years,
with an average yield of less than 2 kilos per
vine. Located on clay-ferrous and very arid,
stony soils with rainfall less than 300 litres
per square metre per year, facing Northwest,
at an altitude of 600 m and located on the
slopes of the Iberian Mountain range, close
to its highest peak: El Moncayo.
DATE HARVESTED
3rd week of October.
PROCESS
Traditional method. Cold maceration for
48 h. in order to obtain more fresh fruit.
Fermented at 26° C with temperature
control. A maceration over fifteen days is
carried out and once obtained the desired
objectives is drawn off and pressed.
AGEING
Ageing in Bordeaux barrels of American and
French oak for eight months. An ageing for
six months is carried out before its release.
TASTING
Colour: Cherry red with ochre tones due
to its ageing, clean and shiny appearance.
Aroma: High intensity, varietal aroma of
very ripe red fruits, scrubland and some
mineral tones with slightly roasted and
spices obtained by the mixture of the
different woods used.
Palate: First start soft , broad, fleshy,
harmonious and structured, rich in
nuances, very balanced, with a very long
aftertaste. Highlighting the concentration
and smoothness of the tannins obtained by
the full maturity of the grapes.
SERVE AT: 17º C

After a cold maceration for 6 hours, the
must is drawn off . Fermentation takes place
in stainless steel tanks under controlled
temperature at 18º C.

Palate: Tasty, fresh, slightly sweet, fruity
and long aftertaste.

Various Pinot Noir clones were lovingly hand-picked and destemmed into small, open-top fermentation tanks. Whole clusters were also added to select vessels to add complexity and structure to the resulting batches. Cold maceration was carried out for 5-7 days before a swift, warm fermentation. Ferments were plunged up to 4 times a day to increase the extraction of colour from the grape skins. After fermentation, batches were left for up to a week on their skins to soften the palate and increase the length and breadth of the wine. Once pressed off, the batches were individually aged in French Oak puncheons (50% new) for 10 months in which they underwent full malolactic fermentation.

Sweet-scented berry fruits with underlying oak-derived elements of toast and smoke characterise the aroma of The King’s Wrath Pinot Noir. The use of stems in fermentation give the wine a subtle perfumed forest floor and spice character. The richly-dense palate is built on layers of blackboy peach and red currants while a fine tannin structure contributes to tightness and length, as well as retaining freshness due to bright Marlborough acidity.
Highly versatile, this wine matches well to most dark meats, mushrooms as well as rich fish such as tuna or trout. We recommend enjoying The King’s Wrath 2017 with a confit duck leg served with wild mushroom risotto and smoked goats cheese.

our HEIMAT Gin is a dry gin, which is produced and distilled in loving craftsmanship. We focus our efforts on domestic cattle from our own orchards. We, Marcel, Rouven and Raphael are three guys who have been best friends since their childhood. Grown in a rural area characterized by orchards and vineyards. The father of Rouven and his father-in-law of Raphael runs the family-owned distillery in the fifth generation.
Fruit and noble fires from indigenous orchids are his specialty. Here, we discussed early on the subject of distillation and the production of fires.
For many years now, the Gin has been a loyal companion for our common evenings. Consequently, one came to another. We worked on a recipe for our own gin. The goal was to get an honest taste from the Homeland (HEIMAT) into the bottle. When processing, we use hand-picked botanicals such as meadow sage, thyme and ribwort as well as apples and pears, all of which are harvested on their own meadows in the HEIMAT. A total of 18 different botanicals find their way into the black earthenware bottle. Each of these contributes to the unique taste of our dry gins. Another feature is the wood-fired copper distillery. In this process, we burn in a small-batch process in a completely traditional way. After the distillation process, our gin is stored at 43% vol. Thus it can develop its taste holistically during a resting phase.
The taste of our dry gin clearly stands out from the crowd. The like-weeders in combination with the fresh apples and pears make for a very short moment for a sweetness, which however directly into a tart note goes over. The light juniper burgundy and the pink pepper accompanied the departure with a very light sharpness. In the aftermath, the floral aromas intensify and create a very pleasantly soft taste.
We recommend to use our HEIMAT Gin pure or in combination with a classic Tonic Water. Especially Mediterranean Tonic Water by Fever Tree or Thomas Henry classical form an excellent interplay. Rosemary, sage, thyme or cucumber are suitable as linings. Of course everyone here has its own taste, which is why it is called. Try out!

For the HEIMAT Barrel Aged Dry Gin, the gin is stored for several months in a remodeled whiskey barrel after distillation. Here we resort to a converted American white oak barrel. The Mediterranean flowery fruity notes of thyme, sage, lavender, apples and pears are complemented by the wonderfully strong barrel flavors. Especially the caramel and vanilla flavors of the barrel created by the toasting form an excellent symbiosis with the gin.
The harmonious interaction is characterized by a high degree of complexity and a wonderfully soft, rounded taste. The storage gives the HEIMAT Barrel Aged Dry Gin extra depth and a perfectly balanced complexity, which in addition to the use in cocktails, especially in the pure enjoyment delight.
