“We all got pieces of crazy in us, some bigger pieces than other”
The thing about First Frontier is the hops. Easy… This is an IPA “the American way”, no sticky-sweet malt profile, just the real deal potent and aromatic hops. The result is a refreshingly dry, fresh and bitter IPA, heavily dryhopped with the three American hop varieties warrior, simcoe and centennial, dealing a punch of citrus, peach and grapefruit from the deepest of our hearts directly to ya face. Just added a bit of caramel malt; merely to harness and balance the alcohol.
Punjabi Club Rye Whisky displays a golden straw color, and when the whiskey glass is tilted and twirled, stubborn legs forming, some of which refuse to drop back into the whisky. The nose is full of clean oak and rye spice with obvious notes of fresh grain and straw accompanying the spice. As the glass sits, orange peel and citrus fruit notes begin to climb out of the glass as well as some fresh ginger and coriander spice, a wonderful aroma from a beautiful Canadian whiskey. There is also a firm underlying sweetness, which may remind you of cotton candy and marshmallows. The oak and grain scents seem to grow a little stronger, the rye whisky offers a lot of promise on the nose.
Upon sipping this whiskey neat you will find the flavor of rye in the foreground is surrounded by oak spices. In the background, growing in intensity with each sip of this tasty whisky, is a sweet and sour fruitiness, which seems to be trying to overtake the hard rye and oak spice (and does so after just a few sips). The fruit-like flavors have an exotic flair with bits of mango and grilled pineapple mixed in with orange and sour apple juice. There are sweet minty menthol-like undertones and a firm grassy (and spicy) tobacco lurking underneath. All of this makes for a very unique and interesting rye whisky.
The finish after every swallow of this delicious rye whisky is spicy with an almost gin-like accent of pine and coriander combined with ginger rushing through the exit.

The Ryans have been whiskey people for 6 generations. Tipperary man John worked in the 1820's in Limerick Distillery (Walker's). Michael worked in Birch's Roscrea and supplied barley from the nearby home place in Toomevara. Thomas set off for Dublin in the mid 1890's, and after a long vintner's apprenticeship, started independent sourcing and finishing of the finest of Irish single malt, culminating in Ryan's Malt (supplied around the city and in his own pubs, starting with the first – the iconic Beggars Bush on Haddington Road Dublin – bought in 1913 and still in the family). Jack honed the craft further, till the near demise of Irish whiskey brought a hiatus. Eunan revived the family tradition in 2013, to award-winning effect, and the next generation is getting involved already.
Jack Ryan 12YO has to date garnered an Irish Whiskey Award and a San Francisco World Spirits Gold, while Jack Ryan The Bourdega 15YO won a San Fran Silver.
Jack Ryan Whiskey is finishing at present in bourbon, rum, and calavados. Testing and tasting by our expert panel is very encouraging and suggests that the calvados finish (a collaboration with Chateau de Breuil) is emerging, the rum is asserting itself, and the bourbon maturing nicely. We have barrels on Santa Cruz, currently seasoning with madeira (a collaboration with Justino's), returning to Ireland mid-2018. And our virgin oak barrels stand ready for use.

The day after your tour de force in the world of alcohol, where good manners has been thrown over the shoulder, the liver has been punished and the dance floor hasn’t looked better since John Travolta in Saturday Night Fever, ones physical and mental state needs to get in gear for another week of tedious paperwork. You need something to cleanse your tastebuds from the taste of the cheap slave tequila. You need something to recover you safely and give you a renewed love and zest for life. In simple terms, you need a really good recovery beer (in Danish “Reparationsbajer”).
The problem is that there are few perfect recovery beers! Nauseous mass produced lagers are the last thing you want to think about after you have been making a few calls in the great white telephone. After a years of hard work all results have been gathered and the conclusion is clear: The best way to remove your hang overs is with a potent Pale Ale with powerful and aromatic American and New Zealand hops to give your tastebuds a cold turkey combined with a nice round, pleasant and well-balanced malt profile to massage the palate and reinforce the belief that one shall survive another day!
And that’s why we present for you To Øl Reparationsbajer.

The Spee'Wah Cuvee Chardonnay NV Brut
Alcohol by volume 11.0%
The Murray Darling region straddles the states of New South Wales & Victoria and derives its name from the two rivers, The Murray and The Darling, that course through the region. The climate is warm to hot with long sunshine hours resulting in optimal ripening conditions. The soils are unique to the Murray River system and are technically known as calcerous. Cool, dry weather and minimal frost leading up to harvest has enabled high quality grapes to be grown. The dry winter did result in reduced yields from some vineyards planted on sandy soils but overall yields were as expected. The favourable environmental conditions along with continued improvement in vineyard and irrigation practices has produced sound, high quality fruit which can be seen in the stronger varietal flavour, finesse, balance and structure.
The grapes were night-harvested early in the season to ensure that the resultant wine exhibited fresh acidity and youthful flavours. The individual fruit parcels were then gently crushed, de-stemmed and air-bag pressed into a stainless steel tank. Only the free-run portion was used. Fermentation with traditional Methode Champenois yeast ensured the retention of its lifted aromatics. Fermented in stainless steel for 7-10 days with a traditional Methode Champenois yeast. After fermentation, the wine was left in contact with less for 3 months to develop mouth feel and complexity. 30% of the base wine underwent malolactic fermentation to add complexity to the aroma and palate as well as fullness to palate.
Tasting notes: Colour: Bright, mid-straw. Nose: Stone fruit & grapefruit aromas. Palate: The perfect aperitif. Classic biscuit and brioche characters balanced by fresh citrus flavours. With a fine persistent mousse. Serve at: 6°-10°C, don’t over-chill, enjoy now or with careful storage may enjoyed for several years.
Foods that complement this Cuvee Chardonnay are: Smoked Atlantic salmon, aged cheeses, freshly shucked oysters and especially lobster.
Grape variety: 100% Viognier
Alcohol by volume: 13.5 %.
Vinification: Harvested during the cool of the night to retain freshness and varietal character, the Viognier was then de-stemmed and pressed gently in an airbag press to release juice without extracting too much tannin.
The juice was then clarified before being inoculated with specifically chosen yeast strains designed to bring out the varietal characters of the wine. Fermentation was in stainless steel tanks and temperatures were kept between 14°C and 16°C to allow for a longer ferment, again, in order to retain freshness and allow for maximum aromatic production.
The wine was then stored in stainless steel stirred on lees to create texture and mouthfeel, before being fined, finished and bottled.
Tasting notes: Colour: Light straw Nose: Pungent flower bouquet, jasmine and honeysuckle with a touch of orange blossom and apricot. Palate: The mouth has rich flavours of ripe apricot and peach which match with the good acidity of this wine. Serve fresh and young.
Foods that complement with Viognier are: Moroccan tagine, coronation chicken, seared scallops, gruyere cheese.
