We were inspired for this special, cloudy abbey beer by how the monks of old used to brew small amounts of beer for their own consumption. After all, the Fathers are entitled to a tasty glass of beer to quench their thirst too. But aware of their obligations as they were, they created a version with less alcohol. This allowed their minds to stay clear for work and prayer. Fortunately, the lower alcohol content had no effect on the characteristic abbey beer flavour.

Our brewers decided to take a different approach with Rebelse Strop. In particular, they opted for a fairly unusual and stubborn yeast variety: Brett. This obstinate variety causes the beer to continue developing over the course of time. Along with dry hopping, where the hops are added in the fermentation phase, this feature gives the beer a splendid aroma and a fantastic taste.

Nose/aromas: Earthy aromas merge into a light fruity smell.
Flavour: The unruly Brett yeast causes the taste of the beer to keep developing long after bottling. Rebelse Strop that is rather young gets a more complex flavour: fruity, hopbitter and with a subtle acidity. In time, Rebelse Strop gets a slightly softer, rounder flavour.

Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit as well as build texture in to the wine during fermentation. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid-palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified. Post clarification the wine was aged on French oak alternatives before being stabilised. The wine is then filtered and bottled.

Vinification - After night-harvesting the Cabernet Sauvignon grapes were crushed separately into static fermenters and inoculated with CSM yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Colour – Deep inky red with a purple hue.
Nose – Fragranced with rich fruit cake, raspberry, plum and a hint of mint.
Palate – Well balanced with a medium-bodied structure, this wine showcases the mulberry and plum flavours that typify Merlot. This flavoursome wine is rounded by velvety tannins.
Food - Rib-eye steak, Italian-style gourmet sausages, osso bucco.
Viticulture - Trained onto two-wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity.
Vinification - After night-harvesting the Cabernet Sauvignon grapes were crushed separately into static fermenters and inoculated with CSM yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C.
