After light pressing to extract the juices, the skins are removed. Fermentation lasts three or four months at a controlled low temperature. To allow its typical perfumes and tastes to develop: bread crust, wild apple and a dry taste. The Prosecco Spumante does not have any chemical treatment, neither during vinification nor before its transfer in the bottles.
Bright straw yellow, with slight greenish hues and fine and persistent perlage. Fruity bouquet of apples and pears that blends delicately into more flowery scents. A pleasant crisp acidity on the palate, fresh and sapid.
Ideal as an apéritif, Prosecco can also be enjoyed throughout a meal especially with fish based dishes.

The must slowly ferment in stainless steel at a controlled temperature. The wine rests together with the grape skins in French barriques for 10 months with frequent ‘bâttonage’. The cuvée is created before bottling.
Brilliant straw yellow and crystal clear. Full fragrance, delicate with fruits and floral tones over boisé notes. Rich and warm, elegantly structured, it offers to the palate an excellent long flavor, which evolves into complex fruits, dried flowers and toasted notes.
This wine can be savored by itself because of its rich structure; ideal for fish dishes, aged cheese, vegetable pies and white meats.

The grapes ferment on the skins for 15- 18 days at 25°-28° C. obtaining an excellent extraction of anthocyanins and tannins. The second fermentation takes place in stainless steel and ageing in roasted French oak barrels of 225 liters for 12 months. The wine rests for 3 months in the bottle.
Bright intense ruby red that darkens into garnet with ageing. Full and persistent aroma with over-ripe tones of Marasca cherry on a lovely cascade of vanilla and floral violet hints. Dry, harmonic and velvety with smooth tannins. Aftertaste notes of pepper and dark chocolate.
Sublime with red meats, roasts and aged cheese. So structured and aromatic, this wine can be drunk on its own.

Grapes are subjected to a soft pressing and then to a cold maceration with the skins around 8° C to obtain the colour and aromaticity, follows fermentation of the must at a temperature of 17 ° - 18 ° C. The wine sits on the deposit at about 12 ° - 13 ° until spring to obtain a softer and more complex structure.
Copper colour characteristic of the Pinot Grigio grape. Complex, fresh and rich bouquet with floral scents of orange blossom, daisy and white wisteria which evolves into notes of ripe apricot, pear, white melon and yellow peach. Ending with sweet, well-balanced and fresh citrusy taste.

The must is stored at very low temperatures to prevent fermentation. Fermentation takes place in stainless steel for about two months then wine is cooled down and filtered before bottling.
Bright golden yellow, with a fine and long perlage. Fresh varietal bouquet with notes of exotic fruit, orange zest, peach and apricot. Sweet, with hints of citrus fruit.
Perfect with almost any dessert and with chocolate. Try with spicy and hot dishes.

Our MMXVI is a distillate made from Gewürztraminer grapes and aged in ash barriques. We produce 500 bottles per year, making this a limited edition. The aroma is typical for this varietal, and is redolent of mild hints of vanilla. The flavour of our grappa is soft, warm and very well balanced. Storing the grappa in ash barrels gives it a mellow and elegant feel.

Grapes are picked by hand to select the best fruit. After a soft pressing, a short period of maceration and a short static decantation of the must, the temperature is reduced to 0°C to avoid the fermentation. Starting from the must, soft fermentation takes place in stainless steel, then a short Charmat method, about two months. In the end the wine is chilled, filtered and isobaric bottling is carried out.
Bright golden yellow, a fine and delicate perlage. Notes of exotic fruits and orange zest, peach and apricot. Sweet with subtle aromatic aromas of citrus fruit; the aromatic aftertaste recalls the flavour of the Moscato grape, with pleasant freshness.
While dessert is Moscato's forte, cheese courses, charcuterie or antipasto plates can be perfect pairings. Its versatility, and the lower alcohol also make it an ideal aperitif candidate.

Top-fermented beer, Scotch type. Silly Scotch was born from a unique tradition and, throughout the years, has grown into a reference beer for its particular style. Its lovely red colour with more than a hint of copper is hidden below a beige head. Its complex aromas breathe the scent of brioche accompanied by raisins, fruit jam and fresh raspberry. This is a generous, full-mouthed beer reminiscent of a liqueur. The initial, most striking impressions are those of honey and caramel. The flavours of prunes and roast malt come through in the finish. There is a refreshing aftertaste.
Sour beer. The Silly Sour has been part of our range ever since our brewery was founded by Marcelin Meynsbrughen in 1850. It is brewed with 13% of young beer and 87% of aged beer. The result is a complex beer, fruity and pleasantly acidic. It provides very intense and refreshing sensations.
Top-fermented beer, spéciale belge ale type. A beer with a subtle aroma and an equally delicate taste. Malt, hops and wheat take centre stage, enhanced by a very slight and barely perceptible hint of grains accompanied by a slight touch of caramel that will delight the connoisseur.
Top-fermented beer, tripel type, re-fermented in the bottle. Triple Swaf is a in bottle refermented blond beer based on a recipe 100% original, brewed by the Brewery of Silly. At the tasting, this triple of 8% vol. alc. starts with a spicy side to the nose to continue on a discrete but very present bitterness. This Sauvignon is an aromatic white wine with a pale, straw-yellow colour. A wine with a distinctive bouquet of elderflower and gooseberries, underpinned with typical notes of stinging nettle and tomato leaves.
The grapes for this Sauvignon ripen on different vineyards in the Upper Etsch Valley and on the east and west slopes of the South Tyrolean Lowlands. The vines grow in the gravelly clay soils that prevail there, at an altitude of 380 – 550 metres. Harvesting of the sun-ripened Sauvignon grapes takes place in late September until early October. From the handpicked grapes we press 70 hectolitres of wine per hectare. The Sauvignon grapes are harvested in crates of 220 kg and taken straight to the winery. The grapes are lightly crushed, cold macerated for several hours and then fermented at a controlled temperature of 20°C to give this wine its distinct, unmistakeable flavour.
This Sauvignon is perfect as an aperitif and goes exceptionally well with asparagus, fish and seafood, as well as light dishes with white meat.

This Blauburgunder is a classic Pinot (Burgundy) with the typical hints of raspberry in the nose, garnet red in colour, elegant and structured on the palate.
The vineyard is situated in the South Tyrolean Lowlands close to the village of Montan. The grapes are grown over Guyot-system trellises at an altitude of 450 - 600 metres. The gravelly clay soil gives this wine its quintessential minerality. The grapes for this Pinot Noir reach their ideal stage of ripeness in early to mid September when they are picked by hand to produce a yield of 65 hectolitres of wine per hectare. After the traditional maceration of the Pinot Noir grapes in open fermentation tanks, the wine is aged in large wooden barrels and small barriques.
This Pinot is a great accompaniment to grilled red meat and mature cheeses

Our South Tyrolean Cabernet captivates with its intense dark red colour and a bouquet reminiscent of black currants and green pepper. On the tongue it is robust and dry with mild, fine tannins and a persistent aftertaste with flavours that linger in the mouth.
Our Cabernet grapes grow in the South Tyrolean Lowlands, at an altitude of 220 – 380 metres. The vines are cultivated in gravelly clay soils, on southwestfacing vineyards. The Cabernet grapes are harvested by hand in early October and produce 65 hectolitres of wine per hectare. Once they have been delivered in small 220 kg boxes, the grapes are gently crushed, destemmed and fermented at a controlled temperature of 27°C in the fermentation tank. The wine is aged and refined in large wooden barrels.
This Cabernet goes perfectly with red meat, venison, game birds and strong cheese, among other things.

This Chardonnay has a clear, straw-yellow colour with green highlights and pleases the nose with ripe, fruity and exotic aromas. On the palate, this wine impresses with its delicate crispness and delightfully earthy fullness.
The vines for this Chardonnay are cultivated on traditional pergola and trellis systems (Guyot) in the Lowlands and Upper Etsch Valley area. At an altitude of 400 – 450 metres, the vines thrive in lime gravel soils on the sunny southeast vineyards. The Chardonnay grape harvest begins mid to late September. From the handpicked grapes, a yield of 65 hectolitres of wine per hectare is produced. Once the grapes have been brought to the winery, they are gently pressed and fermented at a controlled temperature of 20°C. The wine is then aged in a stainless steel tank on the lees until bottling.
This white wine is ideal as an aperitif and goes beautifully with many starters, fish dishes and white meats.

A bright, straw-yellow colour with an unmistakeable aroma of roses, carnations and geraniums. This variety of flavours unfurls on the tongue and penetrates the palate to achieve a perfectly smooth finish.
The grapes for our Gewürztraminer ripen on trellises (Guyot system) in Tramin & Kaltern. The vines grow at an altitude of 250 – 490 metres in gravel, clay and porphyry soils. The sun-ripened Gewürztraminer grapes are carefully picked by hand from mid September until mid October. From this harvest, 70 hectolitres of wine is produced per hectare. The Gewürztraminer grapes are delivered to the winery immediately after harvesting in 220 kg crates. They are gently crushed and cold macerated for a few hours until being fermented at a constant temperature of 20°C. This gives the wine its unique taste and distinctive range of flavours.
This wine is ideal as an aperitif and is a perfect accompaniment to spicy starters, seafood, Asian cuisine, pates, terrines and gorgonzola cheese.

This Goldmuskateller impresses with its golden yellow colour with greenish hues, as well as its intense fruity notes of ripe fruits and typical nutmeg flavour. Clean on the palate, it presents a crisp acidity and subtle minerally, fresh and rounded aftertaste.
The Goldmuskateller grapes are cultivated in the Lowlands and Upper Etsch Valley at an altitude of 370 – 450 metres. The vines are grown on trellises (Guyot system) in warm, gravelly-clay soils and mineral-rich morainic soil. The Goldmuskateller grapes are harvested by hand in mid to late October. The yield amounts to 70 hectolitres per hectare. The Goldmuskateller grapes are delivered to the winery straight after harvesting in 220 kg crates. Here the grapes are gently crushed and cold macerated for several hours. They are then fermented at a controlled temperature of 19°C, which gives this wine its unique flavour and distinctive nutmeg aroma.
Our Goldmuskateller is ideal as an aperitif.

This Lagrein impresses with its dark, garnet-red colour, flavours of red forest berries and fres fruity scent of cherries. Harmonious in the mouth with a smooth, rounded body and a good tannin structure. The delightful and wellbalanced acidity gives it a freshness that makes it a joy to drink.
The vines are cultivated in gravelly, sandy soils and trained over trellises, as in the Guyot system. They grow in vineyards near Bozen, as well as in the Lowlands, at 220 – 350 metres above sea level. The healthy, ripe Lagrein grapes are handpicked in early to mid October, from which 60 hectolitres of wine is produced per hectare. Once delivered, the hand-selected grapes are destemmed and fermented in a fermentation tank traditionally for about 10 days, at a temperature of 28°C. The wine is then aged in large wooden barrels.
This Lagrein is ideal with hearty meals, grilled red meat, game and strong cheese.

This Müller Thurgau is distinguished by its fresh character and variety of flavours. Its floral aroma and subtle spicy taste of nutmeg, with a lively acidity, give this wine its special quality.
The vines for this Müller Thurgau grow in the South Tyrolean Lowlands and on the southeast-facing slopes of the municipality of Kurtatsch. The grapes thrive at an altitude of 550 – 700 metres, in the gravel soil of the area. The grapes for our Müller Thurgau reach perfect maturity in late September until mid October. The yield from these handpicked grapes is 70 hectolitres of wine per hectare. Once delivered, the grapes immediately undergo a short maceration time and are then gently pressed, clarified and fermented in a stainless steel tank at a controlled temperature of 20°C.
Our Müller Thurgau is ideal as an aperitif and goes well with fish and white meat.

Our Rosenmuskateller is a light red colour and has a delicate bouquet of roses. The taste is full-bodied and spicy, soft on the palate with an aftertaste characterised by slightly sweet notes.
The Mediterranean climate and gravelly soils create the ideal conditions for the Rosenmuskateller grapes to ripen to perfection. The vines are trained on Guyot trellis and pergola systems and flourish at an altitude of 220 – 300 metres. The Rosenmuskateller grapes are harvested by hand in October. The yield is 70 hectolitres of wine per hectare. After harvesting, the Rosenmuskateller grapes are delivered to the winery in 220 kg crates. There they are gently crushed and destemmed. The grapes are then fermented at a constant temperature of 22°C to give this wine its unique flavour and distinctive aroma of Rosenmuskateller.
Our Rosenkavalier is ideal for all lovers of medium red wines. As a dessert wine is goes superbly well with doughnuts and poppy-seed pastries.

The Vernatsch grapes ripe north of Bozen, in the heart of the St. Magdalener region, at 450 metres above sea level. The Vernatsch vines are over 40 years old and are cultivated using the traditional pergola method. After the traditional maceration process at a controlled temperature of 25°C, the wine is aged in large wooden barrels.

The vines for this Pino Blanc are grown in the Upper Etsch Valley and Lowlands at an altitude of 250 – 500 metres. The typical gravelly clay soil provides the ideal growing conditions for this kind of grape. Harvest of the Pinot Blanc grapes begins mid to late September. The grapes are picked by hand and the resulting yield is 70 hectolitres of wine per hectare. After a short period of maceration, the freshly picked Pinot Blanc grapes are gently pressed, clarified and fermented in a stainless steel tank, at a constant temperature of 20°C.

» AURATUS - The golden « A wine as precious as gold. In every aspect. The native variety Gewürztraminer is spicy and aromatic in a particular way.
This Gewürztraminer is characterized by a typical bright golden yellow color, an intense bouquet of roses and lychees and accentuated by discrete spicy notes of cinnamon and cloves. The palate is full with body typically robust and juicy and elegant structure.
Our Gewürztraminer AURATUS grows in its place of origin, Tramin, on the South Tyrolean Wine Route. On an exposed sunny vineyard in the Rungg area of Tramin, we take advantage of the ideal conditions for the production of physiologically ripe Gewürztraminer grapes. The vines grow at an altitude between 320 – 400 metres in clay-loam soil. When the grapes have reached their ideal, physiological maturity, they are selected and sorted by hand from late September to mid October to ensure only the best grapes are used in the further processing of this Gewürztraminer. From a plant density of 7,000 vines, a yield of 45 hectolitres per hectare of wine is produced. The fully ripe and selected grapes undergo an approximately seven-hour process of cold maceration before pressing. Temperature-controlled fermentation at 20°C and ageing on the lees give this Gewürztraminer its special flavour.
Gewürztraminer AURATUS is ideal as an aperitif and goes exceptionally well with spicy foods, liver pate, Asian cuisine, sophisticated fish dishes, crab and lobster.

The best conditions for the ripening of Pinot Noir grapes are on the steep slopes in the sunny, southwest-facing area of Glen, in the municipality of Montan. At an altitude of 600 metres, the gravelly clay soils allow the trellised vines to thrive. When the Pinot Noir grapes have reached perfect ripeness, they are immediately handpicked by experienced winegrowers. With a plant density of 8,000 vines, 40 hectolitres of wine is produced per hectare. Fermentation of the fresh, hand-selected Pinot Noir grapes takes place in open fermenting vats. To achieve the best possible colour and fruit avour in the wine, so that it remains in contact with the skins for a long time. After the temperature-controlled fermentation process at 28°C, the wine is aged in small French oak barrels for 14 months.
This Pinot Noir DIGNUS goes perfectly with avourful starters, red meat, game birds and medium-aged cheeses.

» GRATUS - The caressing « Citizen of the world, welcome guest on the sunny slopes of South Tyrol. It stands out for its grace and refinement.
Deep, ruby red in colour, a bouquet of classic Cabernet aromas such as ripe black currants, blackberries and green pepper. With a juicy, full and soft tannin taste, it is concentrated on the palate and characterised by its high denseness and complexity.
The sun-drenched plains of the Lowlands and the hilltops surrounding Montan is where we find the grapes ripening especially for our Cabernet GRATUS. The sandy clay soils provide the best conditions for the over-35-year-old vines to grow. They are cultivated using the Guyot trellis system and lie at 220 - 380 metres above sea level. The sun-ripened grapes are harvested by hand from mid October. The yield is 50 hectolitres of wine per hectare. The handpicked grapes are gently crushed and fermented for 12 days in a fermentation tank at a controlled temperature of 28°C. During the fermentation process, the must and grape skins remain in constant contact with each other in order to achieve a better fruit, colour and tannin quality. After fermentation, this Cabernet is aged for 15 months in small French oak barrels and then for a further 5 months in the bottle.
This Cabernet GRATUS goes superbly well with game and exquisite, dark meat dishes.

» LATUS - The complex « The autochthonous Lagrein is as versatile and powerful as the country in which it grows. Expressive and diverse, this wine is one of South Tyrol like no other.
Very dark, ruby red in colour. This Lagrein LATUS presents a delicate and spicy note of ripe sour cherries and forrest berries in the nose. On the palate, it unfolds with a bold, full-bodied but lush, velvety structure with a minerally, complex and lingering finish.
The Lagrein vines, some of which are over 45 years old, grow in Auer in the South Tyrolean Lowlands and a part in Bozen. Perfect climatic conditions prevail for the Lagrein grape to mature at the carefully selected vineyards, with sand and gravel soils located at an altitude between 220 – 300 metres. The Lagrein grapes are picked by hand with the utmost care when they are perfectly ripe for harvesting in late September. The vines produce a yield of 58 hectolitres per hectare. After a short maceration time, the selected grapes are fermented for about 12 days at a constant temperature of 28°C. This wine is then aged for 12 months in French barriques and large oak barrels.
This Lagrein is an excellent accompaniment to red meats, game and mature cheese.

The grapes are lightly crushed, destemmed and fermented at a temperature of 28°C for about 10 days. By gently pounding the skins down and carefully pumping the must around, contact with the skins is maintained for as long as possible to achieve good colour and flavour extraction. The wine is aged for 12 months in small French oak barrels.

The grapes are delivered to the winery in crates of 220 kg. They are lightly crushed, destemmed and fermented at a temperature of 28°C for about 10 days. The wine is aged for 15 months in French barrique barrels, followed by a further 6 months in the bottle to mature fully.
