Grenache is a variety that has to be perfectly handled from the vineyard to get a great final product, and in this
process you can see that.
Before we produce our red Grenache, we harvest half of the grape bunches to make the rosé. By doing this, the rest get to mature better
and faster, since the plant now divides what it absorbs from the ground between less bunches. As a result, we obtain higher volumes of
alcohol and more intense wines.
In this case, it is also co fermented with the Syrah and Mourvedre varieties, giving very bright colors to wines, such as blue-violet or
cherry red.
It has a great body and it is easy to drink, with flavors of raspberry, strawberry and candied aromas. Ideal to pair any kind of food.

Grenache/Syrah/Cabernet Franc/Pinot Gris: Garnacha (or Grenache in French) is one of the most planted
varieties in the world. It comes from Spain, but it can also be found in the south of France. It is a very common variety in these two
countries, that is why they produce rosé wines the most.
It takes longer to age, but it can reach a high concentration of alcohol, and for that, one has to know how to control its production.
This wine is made with a pellicular maceration of the Grenache, Cabernet Franc and Syrah varieties. The maceration lasts several
hours. They are harvested sooner than they would be for a red wine.
The idea is that our rosé does not exceed 13.5% alcohol by vol., for it to be a wine easy to drink with a natural acidity, but also with an
oiliness that can be appreciated in the mouth.
Once we get the expected color, the juice from each of these varieties will ferment at very low temperatures, separated from their skin.
After the fermentation, the color turns orange like wines from Cotes du Rhone. In other parts of the world, this orange color is known
as “orange wine” or “onion-skin wine.”
This is a very versatile wine, perfect to pair fish, shellfish, white or red meat, and pasta. It is also ideal to drink on its own.

Our sparkling ANDELUZ is produced using the Champenoise method. The varieties we use are Pinot Noir, Chardonnay
and Pinot Gris. They go through fermentation all together. The percentage of each variety depends on the year. Once the bottles finish
fermenting, they spend at least 6 months in contact with the lees at a low controlled temperature. When it is time to do the disgorging, the
bottles are placed in desks leaving lees collected in the neck of the bottle. Then, when the bottle opens due to the pressure, the lees come out,
leaving the liquid inside of the bottle completely clean. After that, expedition liqueur is added to make it extra brut, which means the
