We used traditional floor malted pilsner from Czech Republic for malt complexity and a mix of noble and American hops to make our Czech style Pilsner with the signature Tanker hoppy and vibrant flavors. This tiny, slightly tart fruit brings back childhood memories to many of us, especially in Estonia where red currant bushes are very common in gardens. Perhaps you remember that picking the fruit was troublesome, the taste felt like nothing special but it was still fun and a part of your childhood? Today, the redcurrant has been welcomed back as one of the local superfoods.We have created something special: a mixed grain, mixed fermentation Berliner Weisse with locally sourced red currants.A grain base of 50% malted barley and 50% wheat plus a mixed culture fermentation creates a classic sour treat. The fruit was added towards the end of the fermentation of a berliner weisse base, with the macerated fruit providing extra cultures for secondary fermentation. Redcurrants are the star of the show.The aroma is fresh, tart, lemon, redcurrant and some acidity. The taste is clean, tart, red currant, lemon, candy, sherbet and old fashioned lemonade with a dry finish. Light body. This wine honors the Cistercian monk of the eighteenth century, Dom Denise. Dom Denise wrote the earliest manuscript about viticulture and oenology. The manuscript was found only 10 years ago. Dubliner is the bold, straight talking Irish Whiskey
This is the story of a Pale Ale with lots of taste but less alcohol. Hop aromatic with some bitterness, notes of grapefruit, pine needle and passionfruit.
For a softer mouthfeel, we have used a certain amount of unmalted wheat and oats. The hops are mainly a foretaste and aroma in this beer. By using large amounts of Mosaic, Citra and Amarillo late in the boil and in the yeast tank, we get a lot of taste and aroma but little bitterness.

Celebration Whisky
We finished maturing this whisky in age port barrels to intensify the honey and caramel characters and add richness to the palate. When the flavour profile satisfied our master distiller, the whisky was carefully hand bottled. Enjoy notes of spice, cinnamon, nutmeg along with the port barrel intensified caramel, vanilla bean and honey characters. Some red fruits and honeycomb along with soft toasty oak develpo on the finish.

100% Sauvignon Blanc
Dry grown handpicked parcels of selected batches of fruit from our ‘POW block’, planted in 1944, and our ‘Katunga’ block planted in 1968, were fermented in our original concrete vats, with three daily pump overs. Minimal oak used to showcase the fruit expression of Grenache.
A bouquet of exotic, perfumed red cherries, rose petals and raspberry with hints of spice and chocolate. Bright brick red colour and a generous depth of mouth feel, delivering rich raspberry, spicy black plum, mulberry and fruit cake, enhanced by fine grain tannins. A fine example of McLaren Vale Grenache exhibiting great power and length of flavour.
This exceptional 2019 vintage has produced fruit of the highest quality.
A slow ripening period had delivered a distinctive pure varietal character. Fruit parcels primarily from the Johnston owned estate surrounding the McLaren Vale winery provided the framework for this elegant Shiraz, with a mixture of seasoning in both French and American oak, only 18% being new.
Displaying aromas of Satsuma plum, black cherry, and vanilla bean, delivering a rich and long palate of dark
chocolate, mocha, cedar and coconut.
The exceptional 2018 vintage provided us outstanding fruit quality, great colour, varietal character, ripe tannins and length of flavour.
For this our twenty fourth Petit Verdot release we selected fruit from several of the Pirramimma McLaren Vale estate blocks, each providing its own distinctive profile. The wine has a lifted bouquet of black cherry, violets, pink plum and musk, enhanced by hints of cedary oak.
The concentrated palate exhibits boysenberry, red currant and tangy Morello cherry, and the fine grain textured tannins, subtle oak and savoury varietal flavours are beautifully integrated in a long-sustained finish.
Pure malt ale, brewed with 100% barley malt. Anais has an important aromatic profile, smoked notes, intense taste, dry, slightly bitter and with a caramel and hazelnut aftertaste due to the use of special malts. Its head is compact, creamy and adherent foam. Unfiltered, unpasteurized, top-fermented and second fermentation in the bottle.
Ingredients: water of Gualdo Tadino, barley malt, hops and yeasts.
The ideal food pairing for the smoked beer Anais is with seasoned, intense and pungent cheeses, smoked fish and as the German tradition enlightens a smoked beer pairs well with pork shank.
The exceptional 2018 vintage conditions guaranteed slow ripening and distinctive varietal character. We selected the parcels of fruit from our “Orchard Block” which was planted in 1967 using the famous low yielding “Reynell Clone” of Cabernet Sauvignon and our 30-year-old “Pig and Pony” vineyard.
The wine exhibits a bouquet of lifted blackcurrant, violets and mint, with bramble notes and hints of cedar oak. With the palate showing intense briary blackberry, red currant and spicy black cherry flavours, with hints of quince, red capsicum and Kalamata olive. This powerful yet elegant wine is framed by balanced tannins and subtle oak, finishing with great length.
We planted this famous French variety in the late nineties, and the 2019 Tannat is only our fifth release under our Reserve White Label.
The Tannat’s famed tannins are demonstrated in this black, inky, brooding full bodied wine. Matured for two years using seasoned French and American oak, this tightly structured wine displays a bouquet of blackberry, Dutch liquorice, passionfruit, and tangerine complemented by hints of lavender and raspberry.
The robust palate exhibits black forest fruits, blueberry, tamarillo, and blue damson plum, with hints of Kalamata olive and prunes, coupled with cedary cigar box, peppermint, and rosemary characters.
The moderate summer and temperate autumn were ideal for producing quality Chardonnay fruit. We selected fruit from our Homestead and Johnston Road blocks, plus fourth generation growers on McMurtrie Road and Badgers Road near Kuitpo in the Adelaide Hills. The cool climate Adelaide Hills Fruit complemented the richer McLaren Vale component. Each vineyard was picked at differing Baume levels to guarantee a spectrum of flavours.
A portion of each vineyard was barrel fermented in new Tonnellerie Quintessence French Oak, using 7 different yeast strains, including Wild Yeast. The complex nose displays nutty smoky oak, melon, peach and citrus aromas, with a hint of apple. With the palate delivering peacharine, grapefruit, smoky almond, rockmelon and tinges of mandarin and cashew. A multifaceted, textured wine with fruit, oak and natural acidity in harmony, finishing with great length of flavour. Approachable now or will reward short term cellaring.
For many years we have worked with a long-term grower for this single site Riesling on the rocky eastern edge of Watervale. In the early 1900’s this was the site of the ‘Watervale Defence Rifle Club.’ On “Friday 27th June 1902 representing the successful Watervale team against Port Broughton and Brinkworth where the eminent Rev S.C.Mugford, ‘crack shot’ John Ward, A.Graham, G.Hunter, O.Castine, C.Smith and future Quelltaler Winery Manager, Emil Sobels chose their rifle of choice -for the majority of participants it was the legendary 303.”
The bouquet displays lemon, lime and Jonathon apple notes. The palate exhibits kiwi fruit, intense lime and lemongrass with hints of mineral and elderberry, which are beautifully enhanced by crisp natural acidity. The Very cool vintage has provided us with a wine of great length and varietal purity.
Hand selected parcels from our original plantings in the Katunga block from the mid 1980’s deliver miniscule yields of extremely high concentration.
We barrel fermented 40% of the juice in new French oak barriques, with 25% matured in 2 and 3 year old French barriques, plus older oak for the other 35%, maturation was 28 months. This powerful intense wine displays a bouquet of blackberry, violets, Spanish olive, Dutch liquorice and spicy cedary oak, with hints of lavender and musk. The palate delivers blueberry, star anise, Kalamata olive, black cherry and bramble, all enveloped by firm-controlled tannins and savoury oak.
This big, brooding Petit Verdot will require serious aerating to consume with food in its youth or will reward long term cellaring under the right conditions.
The miniscule from the old low trellis contoured vineyard yields under 2 tonnes per acre. The result is a wine of immense concentration.
The bouquet displays spicy red plum, mulberry, bramble and subtle cedary oak, with hints of coconut and vanilla. The palate shows distinctive regional flavours of cranberry, Kirsch cherry, wild loganberries, black plum and toasted Mocha oak, complemented by spice and savoury notes.
This powerful Shiraz delivers balanced fruit, firm structured tannins, and harmonious oak, finishing with great length of flavour.
Approachable now or will develop for over 15 years with careful cellaring.
For our first Ironstone Cabernet Sauvignon we selected fruit from our “Orchard Block”, which was planted in 1967, using the famous low yielding “Reynell Clone”. The 50 year old “Basket Weaved” vines provided us with a very robust Cabernet, with excellent varietal character, backbone and longevity to produce an Ironstone wine. We barrel fermented 25`% of the wine in new French oak barriques, with 75% matured in 3-4-year-old barriques. Oak maturation was 26 months. This full bodied Cabernet shows blackberry, blueberry, mint julep, rosemary and ripe red capsicum on the bouquet, with hints of cedar and toasted almond from the oak. The powerful intense palate delivers, blackcurrant, bramble, black olive, tobacco and red currants, enhanced by tinges of celery seed and lemony oak, all enveloped by front forward tannins, that balance and control the ripe fruit.
Handpicked fruit from our gnarly, old POW Bush Vine block, aptly named after the Italian Prisoners of War who planted the vineyard in the early 1940’s. Situated over two lateral layers of Ironstone, the vines are dry grown producing incredibly small yields, delivering a Grenache of fragrant beauty, power and poise.
We matured 50% of the wine in new 600lt French oak puncheon’s and the other 50% matured in older French and American oak to maintain primary fruit.
This bright and vibrant wine exhibits a bouquet of red rose, spicy raspberry, pomegranate and red cherry, with hints of subtle nutty cedary oak. With the palate delivering raspberry puree, dried cranberry, red currant and nutmeg, intermingled with Christmas pudding and spices.
A quintessential McLaren Vale Grenache.
A limited release that was named after the famed Clydesdale’s who worked the A limited release that was named after the famed Clydesdale’s that worked the land in the 1940’s at Pirramimma and are now buried in the “War Horse” Shiraz vineyard. Also a nod to Louise Johnston’s grandfather who served in the 9th Light Horse brigade in northern Africa during world war 1. The ninth was entirely South Australian’s who took their own horses with them.
The miniscule grape yield provided by the old contoured low trellis vines presented us with a quintessential McLaren Vale Shiraz. This limited release wine displays a bouquet of red cherry, spicy plum and peppermint infused with hints of cinnamon and vanillin oak.
The intense palate delivers loganberry, red currant, blueberry, star anise and dark chocolate, enhanced by subtle toasted cedary oak and hints of rhubarb.
This handcrafted wine is superbly balanced by a seam of structural tannins, well integrated oak and great flavour profile.
This late ripening variety benefited from the long cool summer, which enhanced optimum varietal character. The 2019 Cabernet Sauvignon displays a bouquet of black briary fruit, cherry, spicy plum with hints of cigar box and violets, with the palate delivering ripe blackcurrant, morello cherry, red capsicum and chocolate notes complemented by hints of mint and cedar.

The moderate Autumn and summer provided perfect ripening and optimum flavour. The 2019 Shiraz displays a bouquet of black cherry and mulberry, enhanced by hints of spice and subtle cedar oak.
With the palate delivering briary blackberry, Satsuma plum, cranberry and dark chocolate notes, integrated with hints of cracked pepper and liquorice.

For this fresh lively crisp white, we selected parcels of Sauvignon Blanc from our OTC and Katunga blocks in McLaren Vale. The bouquet exhibits fresh lemon sorbet, grassy herbaceous notes, gooseberry and guava.
These aromatics continue on the palate, which are enhanced by subtle citrus, passionfruit and crisp snow pea, with hints of apricot.
This lively vibrant wine is well balanced, with natural acidity and long flavoursome finish. An ideal accompaniment for all seafood and poultry dishes.

This fruit driven Grenache was produced from fruit selected from our old War Horse block planted in 1943.
These old bush vines have delivered rose petal, spicy raspberry, and strawberry on the bouquet, with the palate delivering pomegranate. Loganberry, sweet Stella cherry and cranberry complemented by hints of cedar and vanillin oak.
Ready for immediate drinking or will cellar until 2026 under right cellaring conditions.

The long cool summer was ideal for the early ripening Merlot and the later picked Cabernet Sauvignon, with both parcels delivering distinctive varietal character.

First released in 1957, this rich fortified wine was matured in small oak casks for a minimum of 12 years before release, honouring Geoffrey Johnston who became custodian of the Pirramimma fortified collection in 1978.
Pirramimma has produced this luscious fortified wine for many generations. Blended from Grenache (60%) and Shiraz (40%) varieties which were matured in small old barriques for over 12 years. Light tawny in colour with a developed rancio character on the nose and a full rich palate.
At Pirramimma we maintain the tradition of ageing our fortified wines through a solero barrel maturation system. The foundation of the blend dates back to the 1960’s when Digby Johnston, then winemaker, made the base wines. Each year the base wine is blended with our best tawny outside the blend to make up our famous Digby Rare Old Fortified.
The base is then topped up with the next oldest blend and so on. This tradition ensures the quality is always consistent and will improve over many years. This continual blending also ensures the overall blend is vibrant in colour whilst maintaining wonderful aged characters.
This richly flavoured wine was fortified with quality brandy spirit and matured in small oak barriques.
Fruit for this luscious barrel aged fortified, we let the fruit shrivel on the vine until semi dry, reaching approx. 20 baume, handpicked and painstakingly crushed.
After a short ferment, quality Brandy spirit is added, which kills the converting yeast and retains the natural sweetness. Aged in old small barrels until it develops some rancio complexity, it displays bright ripe apricot in colour with the palate delivering rich raisin, orange marmalade and floral notes.
Fruit for this luscious late picked fortified Shiraz was hand-picked from a 35-year-old Lewiston vineyard on the Adelaide Plains.
Very rich and full bodied showing concentrated puree, liquorice and mulberry conserve, enhanced by Christmas pudding and fresh red current notes.

The inaugural release of our aperitif style Sparkling Cuvée is a delicate and complex blend of 60% Adelaide Hills Chardonnay and 40% McLaren Vale Pinot Noir.
The much cooler Kuitpo Hills Chardonnay fruit, planted 30 years ago on the Johnston property at 340m altitude, displays green apple crunch, lemon citrus notes and clean acidity with a fine bead. The Pinot Noir adds a touch of weight to the mid palate, strawberries on the nose and integrates itself effortlessly. Together they work in harmony to deliver the perfect pre-dinner aperitif that finishes with good length and a dry finish. Will reward mid-term ageing.

For our inaugural Pirramimma Sparkling Shiraz, we selected fragrant cool climate Adelaide Hills Shiraz to blend with the richer McLaren Vale Shiraz, which provided the base wine more complexity.
The bouquet showcases red rose, spice, cherry and mulberry, with hints of cedar. The palate is full and generous, showing great texture and mouthfeel, it displays liquorice, spicy black plum, red currant, and blackberry, with a tinge of pepper. The finish is long and sustained, an ideal pre-dinner aperitif.
S.Sebastião inspired Quinta de S.Sebastião, named after the martyr and great warrior who believed that he could stop the religious persecution that the Roman Empire made the Christians suffer. This wine range, for its irreverence, was also inspired by its historical figure that is intrinsically connected to Arruda dos Vinhos village, where our Quinta stands. This wine range includes wines originated from a Mediterranean climate with a strong Atlantic influence and blends from famous national and international grapes. These wines are characterized by their soft, fresh and elegant palate.
Deep garnet coloured wine, with notes of ripe fruit, orange blossoms and some spices, well paired with toasted notes obtained during 12 months of ageing in French oak barrels. The palate is intense and elegant with tannins to ensure a favourable evolution in the coming years.

These Tannat grapes are vinified with a short maceration of 5 days and subsequently aged for 9 months in oak barrels of second use in order to show its typicity and intensity.
Intense and bright red color. In the nose, red berry fruits such as cherries and raspberries are evident. Delicate oak notes and a long complex spicy palate result in an elegant Tannat character. Persistent, fills your mouth with velvety tannins. It is an ideal choice to serve with all types of cheese, red meat and pasta. Serve at 18°C degrees.

The brand Amat is a tribute to Mr. Francisco Carrau Amat (1790-1860) who in his own time was a pioneer, planting the first noble red varietals in Vilasar de Mar, Catalunya (Spain).
Grapes were crushed over open tanks without pumping. Maceration was performed by traditional punching down the cap. Fermentation was completed in French oak barrels, 50% new and aged for 20 months. Bottled with minimum handling and aged in the cellar for a further year in bottle before released to the market.
Deep intense cherry-red color. Aromas of raspberries, prunes acd cassis combined with a subtle oak gives complex flavors and some notes of chocolate, vanilla and black pepper. It has firm structure, with still lively acidity, giving it elegance and length on the palate. Ripe and sweet tannins and a dry finish that will develop well with time to a softer style. Ideal with any kind of grilled meat, charcuterie and strong cheeses. This wine will age well for many years. Serve at 18ºC.
Starting in 1979 with a new style, Juan Carrau Tannat de Reserva was the first special reserve Tannat in Uruguay. The typical red of Uruguay was vinified with very mature fruit, which results in soft and elegant tannins for a full body wine.
Crushed and macerated for 2 days at low temperature before fermentation. Fermented in stainless steel at 22°C with traditional pump-over. These conditions result in more aromatic complexity. After fermentation the wine is aged in French and American oak barrels for 12 months. It is bottled with minimal handling and kept for 6 months in our cellar.
Red ruby color with deep intensity and red fruits aromas, well balanced with oak notes such as vanilla and tobacco. Plums and quince jam are evident on the nose.
Roundness and smooth tannins contributes for an excellent wine. Ideal to serve with red meat, aged cheeses and grilled foods. It could age well for many years in good

Yellowstone Select Kentucky Straight Bourbon Whiskey has been hand-picked by Paul and Steve Beam, and is a marriage of two high-rye Kentucky straight bourbon whiskies, one aged four years and another aged seven years.
