The first vintage of Vondeling wines made from our own grapes was in 2005. There are now approximately 100 hectares of vineyard, mostly planted to Mediterranean varietals. Most are planted in granitic soils and on the cooler southwest facing slopes. The older vineyards, which include Sauvignon Blanc planted in 1983 and Chenin Blanc in 1986, have come into perfect balance over the years and provide some of our most valuable fruit. On average, crop yields range between six to eight tons per hectare.
Minimal intervention during the winemaking process ensures wines with a unique ‘fingerprint’ of origin. The day’s fruit, carefully picked in the cool of the early mornings, is transported in lug boxes to a refrigerated storeroom adjoining the cellar where the grapes are cooled down to 6°C. This is followed by destemming and berry sorting by hand. The winery, a cleverly converted milking shed, is equipped with a raised trussed ceiling and open-top stainless steel tanks for extra gentle handling of fruit. Separate vinification of specific blocks and natural fermentations are an integral part of the process. Basket pressing, hand plunging, minimal filtering and no fining also feature in the hands-on approach. Wines are matured in first-, second- and third-fill French oak barrels in the atmospheric barrel maturation cellar with its thick clay walls and rietdak ceiling.

The vines are located exclusively in Rioja Alta on the north-western edge of the most prestigious wine appellation of Spain.
The vines grow 650m a.s.l. on nutrition poor calcareous clay soil. Intense maceration for phenol extraction is achieved by frequent transfers. The temperature-controlled fermentation is done in stainless steel deposits at maximum temperature of 26Cº.
Aging takes place during 24 month in French and American oak.
Terroir: Yellowish brown soils with few retention of water that, together with the limited rainfall, produces low yields and grapes concentrated in aromas and high-quality colors.
After a careful fermentation under temperatures not exceeding 28°C, the wine is aged in oak barrels and then bottled for a combined total period of 36 months before release.
The vineyard is located in Valdestillas, on the banks of the Duero and Adaja rivers. It covers more than 100 hectares, at an altitude of 740 m above sea level, in an area with a continental climate.
The soil, of alluvial origin, is very suitable for the cultivation of vines, especially the Verdejo variety, native to the Rueda appellation.
The grapes are harvested at night, avoiding high temperatures, minimizing oxidation, aromatic losses and undesirable maceration.
Fermentation takes place in stainless steel tanks for a period of 15-20 days. Aged for 4 months on fine lees to gain complexity and volume in the mouth. After 2/3 months resting, it is stabilized, filtered and bottled

WINEMAKING: The grape was well developed, reaching a balanced acidity. It was then introduced to the wine process and went through fermentation with temperature control (24-26ºC) with their skins, seeds, and pulp in order to extract colour and tannins. The wine aged 5 months in oak barrels. Afterwards it was filtered through sands and plaque filters.
TASTING: Very elegant and attractive wine with velvety tannins, perfumed nose with notes of red wild fruits and vanilla flavour from barrel aging. It is a soft, full-bodied wine with a persistent final. It must be opened one hour before serving at temperatures from 16º to 18ºC. Best matched with spicy dishes, tradicional Portuguese dishes, pasta and red meat or all sorts of strong cheese.

WINEMAKING: The grapes were harvested at the beginning of September, and then they were separated from the lot, followed by maceration before fermentation. The fruit was then skinned and decanted at 10ºC. The remains were inoculated with selected yeast and proceeded to fermentation with temperature control at 18ºC. Part of the wine stayed in oak barrels. At last, it was stabilized by cold and plaque filtered.
TASTING: Made exclusively with Fernão Pires grape variety, this citrus colored wine with greenish highlights and intense bouquet of passion fruit, pineapple and peach presents an excellent structure influenced by barrel ageing. Very elegant and balanced wine, with a freshness and a persistent flavour.
Perfect with fish, it goes very well with white meats and oriental cuisine. Best drunk at 10ºC.

WINEMAKING: The grapes of Touriga Nacional and Aragonez harvested in September were vinified immediately after the reception of the grapes in the winery. The clear must was decanted at 14° C for 48 h and fermented at controlled temperature of 16° C .
TASTING: It is a fruity wine with notes of raspberry, peach and a floral touch. In the mouth it is fresh with a persistent finishing.
Serve it at 8ºC as an aperitif or with pasta and fish dishes.

WINEMAKING: From hand —picked grapes , fermented with selected yeasts at a temperature of 28° C in stainless steel vats , with foot treading for 4 days. After malolactic fermentation , aged for 8 months in American and French oak barrels.
TASTING: Ruby colour, it is a wine with aroma of black fruits (berries) and nuts (hazelnut and walnut), spice, coffee and some chocolate. In the mouth it confirms the aroma on the nose, it is balanced, soft, with round tannins and a lingering finish and aftertaste.
It should be drunk at a temperature of 18º C and decanted if possible. It goes well with game dishes and strong cheeses.

TASTING: With an intense ruby colour, this balanced wine made with matured Syrah grapes has notes of dry fruits, figs, vanilla, spices, light toast and a persistent ending. Great to match strong cheeses and red meat. It Should be served at the temperature of 18ºC.

TASTING: This top quality grape in a warm and clay soil, produced this ruby colored wine with highlights of violet and a green pepper flavour, toast, coffee and pine nut. It emerges in harmony with the barrel toast, hot and spicy, long and intense, silky.
Perfect with game meat dishes and strong cheeses. Best drunk at 16-18 ºC

INEMAKING: The grapes of the varieties Touriga Nacional, Alicante Bouschet and Syrah harvested in the end of September were fermented in traditional vats with selected yeasts at the temperature of 28ºC, followed by post-fermentative skin maceration during 4 weeks. During this process the malolactic fermentation took place. Aged 9 months in french oak barrels.
TASTING: With a granate colour, it exhibits a richness of aromas that reminds nuts, pines and spices with an intense balsamic note. In the mouth it as an evolving structure, round tanins, with aftertaste and a long and elegant ending. Serve it at 18ºC, with red meat and game.

TASTING: Intense garnet color and fresh aromas of ripe black fruit, spices and vanilla. In the mouth it has a good structure, soft palate and a very persistent finish.
Serve it at a temperature of 18ºC with spicy dishes and grilled red meats.

WINEMAKING: This sparkling wine was produced by traditional methods. The base was a wine made with temperature control. Inoculated with selected yeast for the achievement of sparkling wine, it fermented in a cold chamber for 3 months. Then, it stayed inside bottles during, at least, 12 months, until the degorgement, which only takes place when it is necessary.
TASTING: With a citrus colour, it has a fine and persistent bubble. Produced by the traditional method, it has a fruity aroma with notes of citrus and nuts. It is smooth in the mouth with a very good acidity. Best drunk between 8º and 10ºC, excellent as aperitif but it goes very well with fish , seafood and delicate cheese.

CLIMATE: Dry Mediterranean
WINEMAKING: From grapes harvested by hand, we set up a pre-fermentation maceration during 16h. Fermented with selected yeasts at controlled temperature. Part of the lot was fermented in French oak barrels of 225 liter. There was battonage with fine lees.
TASTING: Citric colour with some greenish highlights, this wine shows some tropical aroma of pineapple, mango and lychee. It has a medium body, and it is soft, round and fresh, with some persistence and aftertaste.
Perfect with soft cheese, fois gras, roasted fish and smoked salmon, makes also a good pairing with some desserts such as apple pie and fruit tarts.
Best drunk at 8° C.

GLEN MAYER BLENDED MALT SCOTCH WHISKY
Glen Mayer is a mixture of pure malt scotch whiskies with different origins, aged in old oak barrels in the traditional manner. It’s a distillate with intense and complex personality marked by hints of oak, fruit and smoke, and it offers its ‘best face‘ savored neat or on ice. Its elegant scent is infused with fruity notes and hints of soft wood. Its palate is solid, with predominance of malt and a long finish where the fruit touches become drier and wood prevails.

BLUE EYES STRAWBERRY GIN
AN ORIGINAL AND BALANCED GIN,WITH A POWERFUL STRAWBERRY AROMA
Is a modern and original gin, with a pale pink color. In its perfume we discover the traditional compounds used in these kind of distillates, such as juniper, liquorice and citrus hints, along with a strong strawberry aroma. In the palate all these tastes are well integrated. This gin also offers a good balance between strawberry sweetness.

BLACK TOMATO GIN comes from Dutch soil and made from organic black tomatoes grown in Italy. A gin with a unique taste. The gin has a clear nose of tomato and a nice full, soft and round taste. Aromatic of cherry and rhubarb fruits with further swirl of glass mulberry, spiced cherry with hints of anise,white pepper and nutmeg come to the fore. Finished with an expansive palate and structured mouthfeel.
The palate is lively and full of flavour with a creamy textur fromextended time on less balanced by a crisp, refreshing acifity on the finish.
Glen Mansion Scotch Whisky (40%) is a blend of the finest Scottish grain and malt whiskies. After careful distillation and a minimum of three years aging in oak barrels, the whiskies are blended for UTO's subsidiary Dew Hill Blending Co. in Glasgow, Scotland. Vinification method: Classic fermentation method with destemming and pre fermentative skin contact followed of the application of dry yeasts. Fermentation up to 30º C in the first 2/3, and lowering down to 20º C during the last 1/3. During the whole fermentative process, pumping over 2 times per day, using each time half of the volume contained in the vat. After the alcoholic fermentation, the cap is plunged for 30 days, and during that period, extraction of the gentle tannins is conducted, along with the malolactic fermentation and the natural stabilization of the wine. Wine is aged in French oak barrels from Seguin Moreau of 225 Lt for 3 months. The wine only goes to consumer after 1 month of ageing in the bottle.
Winemaker tasting notes: Bright, vibrant but elegant aroma to red berries and a few spice notes. It is a great wine, flavourful and velvety, which finishes elegant, intense and persistent.
Serving suggestions: Excellent on its own or as a complement of grilled meat dishes, stews, risottos, pasta, vegetarian cuisine, tapas, petiscos, cod dishes and dry cheeses. Serve at 16 to 18ºC.
Appearance & Aroma
This light gold wine displays lemon rind and mineral aromas with a fresh citrus blossom perfume.
Palate
The palate has zingy lemon zest flavours and great acid length, with the lemon and minerals carrying right through the finish.
Serving suggestion
Serve chilled. This crisp white wine will complement chicken saltimbocca or salt & pepper calamari.
Appearance & Aroma
Light bodied and refreshing, the wine shows aromas of citrus, hints of freshly cut grass and a touch of kiwi fruit.
Palate The lemon, lime and citrus characters carry onto the palate with a fine balanced acid backbone leaving a refreshing and long finish.

Serve chilled. Delicious with Thai chilli prawns or black pepper chicken
Appearance & Aroma
Deep ruby red with a brick hue, the Cabernet Sauvignon has a nose of dark chocolate, blackcurrant and mint.
Palate The palate is sweeter and more fruit driven, with a round palate and an abundance of cherry, blackberry and all spice. Suede tannins on this Cabernet complement the fruit character on the palate, which lingers lastingly.
Serving suggestion
Serve at room temperature with lamb back straps, blanched asparagus, crispy roasted potatoes and homemade mint sauce.

La Réserve de Bouscassé is a wine of the third millennium. True to his innovative and creative vision, Alain Brumont first produced La Réserve in 2007. Nestled alongside the oldest vines on the Bleasdale Estate are three Wild Pear trees that have been there longer than anyone can remember. These old trees have made their home on the natural floodplains of the Bremer River, sharing the benefit of this rich resource with the 1930 block of Verdelho whose grapes go on to make this wine. A crisp, fresh dry wine displaying attractive fruit salad aromas with citrus and tropical flavours. Enjoy it chilled while young.
Bleasdale continues to showcase the ability of Langhorne Creek to produce quality individualistic wines. Shiraz and Grenache were originally grown in Langhorne Creek for fortified winemaking but are proving to be excellent for table wine. Nurtured from small parcels into a vibrant, delicious drink.
