WINEMAKER’S NOTE: Pale straw some green. Attractive lifted citrus, nectarine varietal Chardonnay flavours with subtle oak complexity. Palate is textured and vibrant with great persistence.
VINTAGE: Wet Spring and early Summer made for long slow ripening in 2021. This provided good condition for early flavour ripeness in Chardonnay.
VINEYARDS: Our vineyards are in northern Margaret River with soils of mostly fine clay loams over ironstone. All vines are vertically shoot positioned and run in north south aspect.
VINIFICATION: Grapes were night harvested and the juice cold pressed. Fermentation in seasoned oak barrels resulted in textured wine with bright Chardonnay fruit flavour from early bottling.

VINTAGE: Wet Spring and early Summer made for long slow ripening in 2021. This provided good condition for flavour development in red varieties aimed for Rosé production.
VINEYARDS: Grapes for this wine were sourced from our vineyards in the northern end of Margaret River and selected growers across the region giving us layered flavour profile and texture.
VINIFICATION: Grapes were pressed off, clarified and fermented at a cool temperature in stainless steel, then bottled early to retain freshness.

WINEMAKER’S NOTE: Bright, vibrant purple red with a medium intensity. Lifted spicy Shiraz fruit with a nice touch of oak. Palate is medium weight with bright spicy fruit and medium weight tannins to finish.
VINTAGE CONDITIONS: 2020 was a perfect vintage for red wines. The maturation period through the growing season saw the classic Margaret River weather patterns giving rise to good canopy development and soil moisture levels with good maturities across all varieties.
VINEYARDS: Sourced exclusively from our vineyards in the northern Margaret River where gravelly soils and warmer conditions than average for the region combine to impart rich and vibrant varietal flavours on our reds.
VINIFICATION: Fermented for nine days on skins and then pressed to oak where fermentation was completed. The wine was rotated through 20% new oak for twelve months before a light fining and bottling.

VINTAGE CONDITIONS: The 2018 growing season was characterised by above average winter rains followed by a dry spring free of high winds that led to good flowering and fruit set. Slightly cool and dry conditions prevailed into summer leading to long and consistent ripening. These were ideal conditions for our reds with a fine Indian summer that help develop excellent colours and fine tannin structures in the final wine.
VINEYARDS: Located in north of the Margaret River region our vineyard was planted almost 20 years ago. Low yielding and now mature.
VINIFICATION: Machine picked grapes were fermented in static fermenter and pumped over daily. On dryness, the wine was run to seasoned French oak barrels. It was finally bottled after 16 months in oak and laid down for further maturation until release.

VINEYARDS: The fruit for this wine was sourced from a single vineyard site – one of our vineyards in the Northern Margaret River wine region. The vineyard was planted over 17 years ago, a mature and low yielding site.
VINIFICATION: Hand-picked grapes were chilled overnight and whole bunch pressed. The juiced was fermented with wild yeast in barrel where it remained for eight months, then carefully clarified and bottled.

The harvest is nocturnal, thus preserving to the maximum the aromatic potential and the best organoleptic characteristics of the grape, until its entry into the winery. The fermentation takes place in stainless steel tanks, completing in about 15 - 20 days. After resting for 2 to 3 months and after stabilizing, the wine is filtered and then bottled.
Made with grapes from vines grown organically throughout its process, it has followed the regulations of the "Catalan Council of Ecological Agricultural Production“. The biological and organic production is a system whose objective is to obtain food of the highest quality respecting the environment and without using chemical synthesis products. We make a manual selection of the grapes. Once in the cellar, only the untreated must is used, in order to avoid all the astringent imperfections and the green notes that come with pressing. Named after my great uncle The Reverend Canon R.K. Sorby Adams OBE who was the Anglican Minister at St. Hugh’s Church in my hometown of Angaston from 1956 – 1960. This glorious blend of two classic grapes from the Barossa highlights a traditional favourite and one of my own. Dark brick red with magenta hue. Blackcurrant and spiced plum aromas are complexed by chocolate and vanilla. A gratifying palate of chocolate brownie and cedar spice overlaying the black fruits and plum characters. With outstanding fruit weight and power, the palate is wonderfully enhanced by velvety tannins. Full-throttled yet balanced and structured, with layers of delicious flavours. Our Jellicoe vineyard lies high up in the Eden Valley at around 475 metres above sea level. The low-yielding, 30+-year-old Riesling vines are planted on the lean, rocky yellow podzolic soils common to the region. This is a triple aged rhum. First aging starts at the British Caribbean being there for 6 to7 years, then shipped to the Duero Valley in Spain for second aging process of 2 to 4 years in premium wine oaks at Ribera del Duero and a final ageing with a finising in vermut oaks for 6 months in barrels in Montilla.

Harvested from the north-western side of Somló. A barrel selection, a small part of the whole batch, which showed a higher quality already at the end of fermentation. It spent eight months in oak barrels and then underwent a very intense malolactic fermentation. In order to preserve the vibrant liveliness of the wine, it was bottled without filtration and at low sulphur levels.

Vinification Method | Classic fermentation method with destemming and pre fermentative skin contact followed of the application of dry yeasts. Fermentation up to 30º C in the first 2/3, and lowering down to 20º C during the last 1/3. During the whole fermentative process, pumping over 2 times per day, using each time half of the volume contained in the vat. After the alcoholic fermentation, the cap is plunged for 30 days, and during that period, extraction of the gentle tannins is conducted, along with the malolactic fermentation and the natural stabilization of the wine.
Ageing | Wine is aged in French of Allier barrels from Seguin Moreau of 225 Lt for 3 months.
Tasting Notes | Brilliant claret ruby colour, rich fruit aroma with intriguing notes of chocolate, green tea and dates. On the palate it has power and structure but is, at the same time, fruity with ripe blackberry and cedar flavours standing out. A delicious, complex wine with a long, smooth finish, very tasty.
How to Serve | Excellent for social events it's as well as a superb complement to foods such as roasts, game, stews, cheese and Portuguese and Mediterranean gastronomies. We recommend to serve at the temperature of 16-18ºC.
