In 2021 our Pinot Grigio was sourced from Central Victoria as well as the King Valley. A long cool vintage has resulted in the 2021 Grigio displaying more classic characters and less of the tropical spectrum we have seen in past years. Clean, crisp and versatile, a wine for all occasions.
Medium to deep red colour with a glint of purple and a walnutty, dried herb and earthy bouquet rather than berry fruit. The wine is firm and grippy in the mouth with abundant tannin, the mid-palate full and rich and generous, balancing the significant tannins. A serious red with proper sangiovese structure and real potential. Time will build some complexity here
2020 was a difficult vintage with extreme conditions playing havoc with flowering and fruit set. The catastrophic weather day late November 2019 brought hot windy conditions which affected flowering and fruit set in late spring, resulting in low yields from our Heathcote vineyards. Fortunately we were able to secure some beautiful parcels of Tempranillo, similar in style, from McLaren Vale and other South Australian vineyards, to complement our own Heathcote fruit. The final blend is complex, generous and expressive of the variety
Grapes come from a selection of vineyards in Heathcote. Two are off the deep red Cambrian soil while another comes from tougher more gravelly ground. The Cambrian delivers intense wines with chocolate and earth while the other terroir is more highly fragrant with good acid and sweet frui
The heart of this blend comes from two blocks. The first is the Lewis Riesling Block off the Mitchelton vineyard. After years of sampling the Riesling blocks at Mitchelton, Don tagged individual vines that he felt had a special character. After sufficient vines were tagged he had cuttings taken and sent to the nursery for propagation. The resulting block now called the Lewis Block is a culmination of this attention to detail. The second parcel is from the 69 Block Pewsey Vale clone across the road from Mitchelton. These older vines produce intense classic Riesling characters that complement the Lewis Block vines. The resulting blend is an intriguing wine that shows classic Riesling characters with a twist. When picked at their optimal level or ripeness, the riesling grape has a beautiful dusty pale lemony gold colour with a sweet musk stick flavour. With care and attention, we aim to retain there characters through to the finished wine
The wine has subtle alpine herb notes, overlayed with ripe citrus fruit and touches of minerality. The palate is creamy initially, with focussed midpalate fruit weight and texture. The naturally lower acidity from the 2021 vintage supports expressive and balanced flavours through to a refreshing and lasting finish. Restrained initially, the wine will open up with time in the glass – discover more depth and interest with each sip.
The 2021 vintage certainly had its nuances compared to vintages over the last decade. Early spring frosts, combined with cool wet weather during flowering had a significant impact across Marlborough, resulting in yields being lower than average across the region. Summer turned out dry and warm, and with low-yields an early harvest was upon us; starting 10 days earlier than 2020. Fruit quality was exceptional this year and the wines certainly reflect this with strong Marlborough typicity and generosity. An endearing and layered wine, with diverse aromatics of nougat, nashi pear, vanilla custard and white flowers. The palate is generous, where ripe fruit and texture create richness, yet balance with very fine minerality and a touch of residual sugar to bring the wine to a memorable finish.
The 2019/2020 season will be one to remember for many reasons. Spring started out with mixed weather – cool temperatures, strong north-west winds, rain and a healthy dose of sunshine which became settled warm weather through flowering in December, ensuring a modest fruit set. Late January into February was hotter than average and very dry, then eased into classic Marlborough warm days and cool nights. The warm days help to ripen and concentrate flavour, while the cool nights retain classic Marlborough acidity. Hedonistic aromatics of cassis, black cherry and bramble are supported by toasted oak, cloves and black pepper. The mouthfeel is fleshy and juicy with red cherries that are framed by powdery tannins and an elegant finish.
Immediately appealing on the nose with lifted wild berry and floral aromatics, gradually fading to reveal a complex array of ripe cherry & plum fruits, sweet spices, cola, garrigue, and fennel. Sweet red, black and blue berry fruits abound on the palate, with fleeting nuances of red currant, cola, cinnamon, thyme, crushed coriander seed and star anise adding layers of intrigue. Seamlessly integrated oak and powder fine tannins combine with a fine bead of acidity to give a fresh, pleasingly long finish
The 2020 vintage in Central Otago was a challenge in many respects, not only weather and yield wise but also with the arrival of the Covid19 Pandemic and a nationwide lockdown on the eve of harvest. Despite the challenges thrown at us, we consider ourselves extremely fortunate to have been able to pick a small but tremendously flavourful crop from our own vineyard and those of our dedicated growers throughout the Central Otago region. Upon opening you are immediately greeted by a powerful nose of dark Plum, Blueberry conserve and Cola, complimented by a background of toasted brown baking spices and oak char. The palate is a juxtaposition of vibrant red berry fruits and finely structured tannins building towards a generously velvety core of cherry and spice balanced by precise seam of acidity that draws the palate out to a long lingering finish.

We source from select vineyards within the Clare Valley. These sites have slightly different characteristics which, when blended, give rise to a nice complexity. East-West row orientation maximise climatic influences, benefitting from a cool and dry growing season. 2021 was a classic Clare vintage, producing solid yields and fruit with tantalising Riesling characters.
The 2017 harvest was a little later than usual, with the two single Marananga vineyard blocks being hand harvested over the 9th & 10th of March. Fruit was cold soaked for 3 days and then allowed to warm naturally until the start of fermentation. Fermented in open fermenters on skins for 12 days at 20-25˚C. Gentle pressing off skins using an airbag press, before malolactic fermentation and maturation in oak for 18 months. The oak consisted of 30% new oak including a large format Francois Freres French oak Foudre, and the balance matured in older French oak Foudres & Hogsheads
The key to capturing the brightness with this block of Grenache is to harvest early in the season. The grapes were hand harvested in the 2nd week March. At the winery, grapes were run across a mechanical sorting table to whole berries and tipped into open top fermenters. After a period of 3 days cold soaking, the must was allowed to warm naturally until inoculation with yeast for fermentation, which was carried out to dryness. Fermentation temperature was kept nice and cool between 20-25C, for 15 days, to retain the brightness and pretty aromatics of the wine. Upon completion of fermentation, the ferment was pressing through a basket press, and wine was packed up to a stainless steel tank and a few older French oak barriques for the completion of secondary malo-lactic fermentation. Upon completion of MLF, the wine was left for 4 months on yeast lees to build some complexity before preparation for bottling early in September of the same year.
Select blocks in the NE corner of McLaren Vale were harvested over the 14- 18th of March. Harvest 2020 was low yielding but of high quality. This end of McLaren Vale is slightly cooler, has sandier soils, and produces more bluefruited, perfumed and elegant wines. Fermentation was started in stainless steel open fermenters; letting the ferment warm itself to 28C; and then bringing it back to a nice cool long ferment of 12 days at 22C; retaining those pretty aromatics. Gently pressing of the parcels off of their skins was achieved through an airbag press. Following malolactic fermentation, the wine was sent for maturation in older French and American oak hogsheads, and some seasoned large format French oak vats for 15 months prior to preparation for bottling.

A dry and warm start to the growing season had us planning an early start to vintage. The season was slowed by much needed December rain which also provided lush canopies to ripen the fruit. Although overall 2019 was warm, cool nights helped retain the acid required to keep the resultant wines fresh and crunchy while also packed full of flavour.
Aromas of bright raspberry, red sour cherry, bramble bush and a touch of cinnamon oak. Precise and bright palate, the hall marks of 2021, with raspberry fruit and a graphite savouriness. Oak plays a supporting role for a wine that will age gracefully over the next few years.’

Animals are crucial to the planet’s sustainability, and if we don’t work for the specie’s development, they will eventually disappear. This was the theme that inspired the QSS Rare Range. A combination of aromas and flavors themed after a topic that everyone cares about: the endagered animals. Wines that bring together elegance, enthrallment, freshness and smoothness. The have an ideal terroir and national and international grape varieties, such as Syrah and Touriga Nacional. These wines are produced in Arruda dos Vinhos, where the climate is Mediterranean with a strong Atlantic influence.

2019 has real potential to be also deemed as an outstanding vintage with wines showing finesse and capability for aging. The growing season was consistent with little in the way of wild temperature swings, heavy rains or drought and the vast majority of the grapes were allowed to reach full phenolic ripeness.
This wine shows well defined fruit driven characteristics of peach, nectarine, and pear. It’s zesty acidity and saline minerality makes it a super fresh wine that makes it easy to pair with summer dishes such as Bruschetta or Chicken Cesar Salat.
Origins: 45% Barbados, 35% Trinidad & 20% Jamaïca
Distillation: Unaged rums are selected from both traditional refinement methods, as the ultimate goal is a blend that has the richness and intensity from the distillation of molasses in pot stills combined with the delicacy and lightness from sugarcane distillation in columns.
Maturing: The blend rests in mature French oak barrels on the banks of the Charente River for three months. This last step gives a hint of roundness and elegance to this fresh, fruity and floral blend.

Blend of 100% Borderies eaux-de-vie.
This cognac spends 10 months in new oak barrels before being put into matured casks. At the end of its 4-year aging period, it will spend 6 months finishing in new Japanese oak barrels, the Mizunara. We find smoky and spicy notes with more fruity flavors of fig and cherry.

Distillation: the batches of rums from Trinidad and Barbados are aged for 5 years in their native land in bourbon casks.
Blending: each batch has been carefully selected and finished with particular care to obtain a rich, complex, surprising and innovative aromatic profile.
Maturing: they are then matured for 12 months in the Charente, in barrels that have previously contained Cognac, and finally matured for 3 months in barrels that have previously contained Xeres - Pedro Ximenes. As a result of this original maturing process, the rum draws delicate fruity aromas.

Distillation: Aged at origin primarily up to 8 years in American white oak casks.
Blending: Finished, separately, for 12 months in more than 50 mature French oak barrels on the banks of the Charente River. Each barrel will confer their singular characteristics to the rum according to their age, size and which cognacs they previously contained.
Maturing: Because of the barrel by barrel finishing process, the Cellar Master is able to draw from a complex and diverse aromatic palette of over 50 casks to create a harmonious blend, resulting in a powerful, fruity and unctuous rum.

Blending: SAISON Rum XO is the result of the selection and blending of remarkable batches of rums aged in their lands of
Origin: Jamaica, Barbados and Trinidad. Each batch is then matured in the casks originally used for the Distillerie Tessendier cognacs. Depending on their age, their size and the cognacs previously contained, they will give each batch a particular typicity. This double maturation encourages the marriage of flavours and enhances the subtlety of this exceptional rum, which is at least 10 years of age.
Maturing: This exceptional maturing process provides the Cellar Master with a wide variety of aromatic profiles, which he can then assemble to produce a generous rum, both complex and rich in aromas.

S.Sebastião inspired Quinta de S.Sebastião, named after the martyr and great warrior who believed that he could stop the religious persecution that the Roman Empire made the Christians suffer. This wine range, for its irreverence, was also inspired by its historical figure that is intrinsically connected to Arruda dos Vinhos village, where our Quinta stands. This wine range includes wines originated from a Mediterranean climate with a strong Atlantic influence and blends from famous national and international grapes. These wines are characterized by their soft, fresh and elegant palate.
