It is the star of our winery, due to the exclusivity and good adaptation of this variety in our farms, from our youngest vineyards in the Old Baltana, about 12 years old.
Some strains with selected clones that are not very productive, make us have a good concentration of sugars and aromas, making this wine have a lot of character. Harvested early in the morning, it arrives fresh early in the morning, although dark in the cellar.
A maceration with the skins of about 3 hours inside the closed press, so we extract all the aromas of the skin. Light Pressing, static cold stripping and a controlled temperature fermentation, to maintain the aromatic potential of this variety. Aging in stainless to maintain maximum aromas.

Tasting Note
In view: white wine with grayish and greenish tones, with a very light golden touch, which reminds us that it is a young wine.
On the nose: xarel.lo of fantastic aromatic complexity, its fresh aroma, indicates that it is grown in height. Aniseed notes, white flower, and white fruit at its ripening point. A real kindness on the nose.
In the mouth: explosion of aromas in the mouth, a very acidity embedded in the range of aromas and good structure. Very persistent once it has been tested.

Our Clàssic Penedès follows the traditional method of vinification of the best sparkling wines. This sparkling wine is characterized for being 100% organic, 100% Penedès and 100% reserva (15-month minimum ageing on lees).
Tasting Notes:
A unique sparkling wine, made from our star varietal Sauvignon Blanc.
Pale lemon in color with no signs of development, and alively bubble that rises softly to the surface.
A wine that opens in the glass to offer primary varietal notes coupled with lighter notes of autolytic development.
On the palate we find a creamy mousse, which is the result of the well-integrated gas, and enjoyable citric and floral notes that are persistent.

Grapes from very old strains of the Parellada variety. Strains of more than 60 years, located in our estate of Baltana Vella, 480m high. These strains planted in small coastal slopes and with a fairly extreme organic cultivation, produce grapes with a high concentration of aromas and with a high alcohol content to be Parellada. For several years, the farm has not opened, thus avoiding an excess of production and a balance of the strain, together with a short pruning and a good pruning in green, we make the grapes reach perfect ripening points.
Grape harvested by hand, in small trailers it is transported at a distance of 2km to the cellar. We put it in the closed pneumatic press and press at low pressure. Temperature controlled fermentation with selected yeasts. Aging of 2 months in fine lees in stainless.
From this vineyard, where we also produce Parellada, we have used a part to make a sparkling Clàssic Penedès, something to pay tribute to the star variety of Font-Rubí.
Tasting Note
Pale white gold color, greenish and grayish tones, which mark the elaboration that has been done with the minimum intervention of oxygen in the cellar, along with a very elegant fine bubble.
Leave that aging aroma with a mixture of dry grass aromas of low forest, with an aniseed point
Highlights the fine bubble, its smooth passage through the mouth, with a refreshing acidity that invites to continue savoring this sparkling.

Wine produced entirely on our farm in Cal Costas, 500m from the winery.
Strains of about 10 years old, and in a rather poor soil, which favors stress in the strain and makes the grape have a very interesting concentration of color-sugar-polyphenols. Harvested by machine at dawn and taken to the winery immediately. Skidding and vatting in storage. Every year is different, but more or less, we leave it with the skins between 6 and 10 hours, and we do a direct bleeding of the tank, static settling with cold and fermentation at controlled temperature, always maintaining the varietal aromas.
Short time in deposit and bottled as quickly as possible, to avoid oxidation.
Tasting
Medium ruby. Intense aromas of quince and red fruit compote. Dry, with good fruit flavor and some herbal notes. Structured, balanced with nice finish and good length.

The Syrah grapes come from 25-years-old vines, located on the Foix Natural Park in Castellet i la Gornal. Coming from ecological agriculture, and with a conscientious work of the soil, we get little production of grapes, which makes the concentration of aromas and color exceptional, and a very important thing, perhaps the most, that we get the skins reaches its optimum point of maturation.
Grape harvested by machine early in the morning, and transported immediately to the cellar. Then we skid it and put it with the skins in the fermentation tanks. Remounted daily, usually 2, to extract most ofthe color and the aromas of the skins, at a controlled temperature of about 23 degrees.
To taste, we decide when we to decant it, usually between 10 and 15 days of contact with the skins. Once we decide that we have to separate the juice from the skins, we lightly press the skins. When the alcoholic fermentation is over, the malolactic fermentation begins.
After the malolactic fermentation, we put it to age in stainless tank on fine lees for 4or 5 months, making several "batonnage”, looking for a wine with more structure and complexity.
Tasting
One of the characteristic things of Syrah is its color, it is always very powerful.
View: Intense red cherry with slights tones of garnet blue on the edge of the glass.
Nose: Notes of pepper, married to the sweetness of a ripe strawberry
Mouth: Its mouth is long and elegant, which also highlights the part of the ripe red fruit. The whole is elegant in the mouth, where the balance between fruit, acidity and tannins is perfect.

It is the wine with more complexity of the winery and also the most elegant, from our vineyards ofCabernet Sauvignon and Syrah from our estate of Cal Costas, next to the winery, of an age of about 10 years and 25 years respectively.
Strains that try to work in a way that produces the minimum possible. Placed in a plain touched by the wind, and with a rather poor soil, makes the black grapes are small and with a high concentration of polyphenols. This linked with the height of the farm, make us obtain a strong red wine, uncommon in the Penedès.
Harvested by machine at dawn, arrives fresh early in the morning, although dark in the cellar. Skidding and direct deposit to the self-emptying tank.
Pre-fermentative maceration of 1day and quite cold, with remounts to extract the maximum of fruit aromas.Maceration - fermentation of about 12-15 days according to the vintage, to extract all the qualities of the skin.
Bleeding and minimum pressing of the skins, according to tasting. Stainless rest where will do the malolactic fermentation. Once the malolactic is finished, we put it in French oak andAmerican oak barrels, in equal parts, of 225 from 1º-2º-3º year, where it will be between 9 and 12 months, according to tasting and vintage. Subsequent aging in the bottle for at least 6 months.

In view: red wine with a mediumlayer, with shades of ripe cherry, denoting a wine with a good life in thebottle
On the nose: Light touch of wood and vanilla due to the long aging in barrels, made up with the aromas of very ripe red fruit, with some shades of understory, balsamic and very fresh herbs.
On the palate: its rounded tannins and the excellent combination of fruit and barrel wood stand out.
Pairing: With grilled lamb ribs, with xató, all kinds of sausages, cured sheep cheeses, picadillo de la Cerdanya or game meat.
