Biolab was founded in 1991 from the project of Massimo Santinelli as a small factory of aliments. The project is to distribute 100% vegetal protein healthy food, coming from controlled and certified organic farming only. At the beginning the production was based only on soy beans in order to get high quality tofu, but then it was extended to wheat, kamut and spelt as well. With the co-operation of the biggest Italian wholesalers dealing in the organic food field, after a few years the distribution has been extended to most of the national territory and it’s reached hypermarkets and supermarkets as well, not only the specialized shops. As soon as the production was increasing, it was necessary to improve the production in order to guarantee the product and service quality. In 2003 the company moved to a new and wider factory (in the artisanal area of Gorizia) organized with appropriate machines for the production, storage and distribution. These years are based on results consolidation and experimentation of new ideas. What mainly characterize Biolab is the constant research of new aliment solutions that are suitable to new life styles, to whom doesn’t have enough time to cook but at the same time doesn’t want to renounce at the added value of a healthy and equilibrated alimentation. In 2007 the new range was introduced as preview by the BIOFACH Fair in Nuernberg, the bigger and most important fair in the organic field and it was an immediate success. The Italian quality and taste of Biolab tofu and seitan are recognized abroad as well. Nowadays Biolab is one of the major Italian companies in the organic food field strictly made of vegetal ingredients.

Established in 2008, Gelateria Callipo has as its ambitious main goal to make known the genuine artisanal Gelato production of Pizzo, not only throughout Italy, but worldwide. The old recipes of this craftsmanship have been revived and combined with modern techniques in order to obtain an industrial product with all the characteristics of our local artisanal tradition.
Following the company founder’s philosophy of “Quality first of all”, with passion and dedication, Callipo Gelateria has conquered important goals and achieved prestigious success in the ice cream business. With its 12 product lines and about 70 articles, all of which are guaranteed to be produced exclusively using the very best raw materials and the highest quality fresh milk from the best local dairy farm, sales have widely expanded to foreign markets.
Gelateria Callipo’s factory occupies an area of 3200 square meters, and is characterized by the availability of high productivity high tech equipment, which allows an annual production of approximately 1500 tons of ice cream mix. The plant, with its four process lines, is prepared to meet all market and distribution requirements. The factory has an internal testing laboratory, equipped with sophisticated equipment and expert technical staff, which constantly and continuously monitors the products. The inner laboratory for the Research and Development for new products is endowed with fittings pilot and tools of analysis. Le goût du Roquefort PAPILLON est inimitable. C’est celui de la tradition, d’une personnalité typée dont le secret réside pour une grande part dans l’originalité du Pénicillium Roqueforti. Paissant entre 750 et 1100 mètres, une altitude où les herbages présentent les meilleures qualités, nos brebis sont traites matin et soir. Le lait, acheminé jusqu'à la fromagerie PAPILLON quelques heures après la traite, il est, après caillage, découpé en tout petits dés, selon des méthodes issues des traditions fromagères du Pays de Roquefort. Incorporé au caillé de brebis dès la laiterie, le Pénicillium Roqueforti est un des ingrédients essentiels de la saveur du produit. Il est issu du pain fabriqué par les Fromageries PAPILLON, obtenu à partir de seigles cultivés sur des terrains acides à 1000 mètres d’altitude où tout engrais chimique est prohibé. Après mise en forme, le fromage est égoutté et salé. Le fromage est ensuite placé sur chant au coeur des caves. Ici les fleurines, véritables failles naturelles reliant la cave à l’air libre, permettent de maintenir un taux d’humidité constant. Dès lors, le Pénicillium Roqueforti va poursuivre son lent travail et étendre ses veinures bleues au coeur de la pâte. En moyenne, 150 jours et plus de 70 contrôles qualité sont encore nécessaires pour parfaire l’affinage d’un Roquefort PAPILLON.
